LETS GET NUTS!! You see, not all nuts roast the same! In this video, we will break down what happens to different kinds of nuts when they get roasted, and we'll also go over how to roast nuts properly! Let's dive in and I'll see you in the COMMENTS!!
Roasting nuts, rather than eating them raw, is perceived to enhance flavor at the expense of nutrition. While flavor perception is subjective, nutrition content can be more objectively measured. Therefore, if you prefer the taste of roasted nuts over raw nuts, consider the following:
Conditions: Temperature & Time. Both increased roasting temperatures and times can impact nut nutrition. However, temperature seems to be the more important variable. Therefore, it’s always a better decision to roast lower and slower.
As an analogy, imagine you received a beautifully wrapped holiday gift. You would slowly and gently peel off the tape to preserve the pretty paper (nut nutrition) while gaining the same access to the present (flavors) within. The temperature threshold recommendations listed herein are based on a roasting time of less than 20 minutes.
Consideration 1 - Oxidized fatty acids. When fats are heated, they can become damaged or “oxidized.” Because polyunsaturated fatty acids (PUFAs) are less stable than monounsaturated fatty acids (MUFAs), nuts with relatively more PUFAs will be more vulnerable to oxidation at lower temperatures.
Macadamia nuts contain the least PUFAs (only 2%). They can withstand up to 170°C.
Hazelnuts are a close second, being rich in MUFAs and low in PUFAs similar to macadamia. They can withstand up to 160°C.
Almonds and pistachios have a moderate amount of PUFAs and shouldn’t be roasted above 140°C.
Walnuts are PUFA bombs and are the most fragile. In general, it’s best not to roast walnuts. If you do, do not exceed 130°C. A walnut roasted at 155°C has 30-times the oxidized fat as a macadamia nut roasted at the same temperature.
Consideration 2 - Antioxidant capacity. Heat can damage the natural antioxidants found in nuts, including tocopherols and tocotrienols (vitamin E) and other polyphenols. Since different nuts have different antioxidants differentially distributed in their different proportions of fats and water, it’s impossible to be precise about the maximum roasting temperature of nuts.
However, 140°C appears to be a good general target (an exception can be made for almonds and macadamia; their antioxidant capacity hits a sweet spot at 150°C).
Acrylamide. Acrylamide is a strong carcinogen to humans and can form (by the reaction of asparagine residues and carbonyl groups as part of the Maillard reaction) at temperatures above 120°C. By far, almonds are the most susceptible to forming acrylamide upon roasting. When roasting almonds, it’s very important to keep the temperature below 140°C and to trade in time for degrees, if necessary.
Taste. Although flavor perception is subjective, the paper upon which this guide is based also included a taste test and found that nuts roasted at lower temperatures tended to be score better than nuts roasted at higher temperatures.
Overall Suggestions, By Nut:
Macadamia - 150°C
Hazelnut - 140°C
Almond - 140°C (note acrylamide)
Pistachio - 140°C
Walnut - Don’t roast or less than130°C (A walnut roasted at 155°C has 30-times the oxidized fat as a macadamia nut roasted at the same temperature)
*less than 20 minutes

True it's overwhelming, so know as much as possible, remember as much as possible, follow as much as possible, don't stress over it and perfection may not be possible... Humans can't live forever anyway Also these are subjects of study and practice, and just because of easily available knowledge these days these subjects of science and study are reaching across to the common people who don't belong to the fields like science and medicine and nutrition study ... Nothing wrong with it, but accept the fact that it's gonna be overwhelming, these professionals didn't get it clearly set in their brain overnight... Learn the basics, follow Rujuta Dwivekar & Dr. Pal for the basics of a healthy lifestyle and dive deep if possible with these professionals gradually step by step . It took 3 years for me to change my lifestyle and inculcate these habits and I'm proceeding further now just because I have interest (thanks to the internet) although I'm a layman too.. don't try to imply all of it at once, also remember research will continue and there are counter studies, don't be surprised if what's truth today turn to myth tomorrow

The principle is that Polyunsaturated fats are unstable and turn toxic when heated. Comparing total fats with Polyunsaturated fats content shows that sunflower seed & pumpkin seed & sesame seed are not good options for roasting since they contain almost 50% Polyunsaturated fats. Hazelnut: 13%, Macadamia: 2% Polyunsaturated.

@@zbridgjpxupzm Yeah, obviously, but there are are studies on different seeds and nuts, which show a more detailed picture. For example flax seeds are very high in PUFAs, yet the fats don't get oxidized almost at all during baking.

Nuts and seeds you buy on the shelf are probably allready oxidized. They have usually been sitting there a while by the time they have been picked, processed, and shipped to the supermarket. Same with all nut butters. All sitting there in clear jars, warm temperature, mostly oxidized by the time you buy it. Be careful, if you can, buy freshly picked nuts or nuts still in the shells. They are not exposed to air or the elements as much as processed nuts. All this applies to seeds as well

I have one (maybe weird) question. Is there a slight chance that some people just can't get into ketosis? I'm doing keto for 1,5 year now and I don't see amazing results in the changes of my body. And before anyone will tell me I'm not doing it right let me just say I'm TRYING. I'm counting macro, after few months I said maybe I souldn't count macro. I was doing fasting the way you are saying is the best (like, surprising my body with fasting), I tried prolonged fasting, now I try every day 20+hours of fasting with two meals in max 4h window. And I don't wanna complain, I'm feeling amazing, and every day is a blessing BUT I would love to lose around 10 pounds so the last fat on my belly and thighs and arms can go away. I have long history of breaking bones and taking steroids for asthma etc. - I'm taking care of it, I'm kinda obsessed with it cause I just wanna see the results. I try not to weight myself but take measurments and sometimes they even go up. The last thing I wanna add to this is that since taking exogenous ketones I am feeling that my stomach is more flat, and kinda feel like only when I take them I'm having small results. That's why I wonder if maybe my body don't have the ability to make ketones? Idk if that makes sense. Anyway, I would be so thankful if someone would help :)

What if you cook raw nuts/seeds in butter on the stovetop for just a few minutes (5 or less) at a medium/low heat? I like to do this because it softens them a little & adds flavor (sauteing), especially if you want to make them into a low carb candy or pudding.

What about seeds? I make crispy bread using sunflower-, flax/, sesame-, pumkin seeds and flour from psyllium and have them inte the oven for an hour in 160 C. Is that ok?

Very interesting topic. But unforunately some question I had haven't been answered. When I buy rosted nuts in the supermarked, are they usually rosted at a low enough temperature? What about peanuts? I know they are technically not nuts but still I would like to know if its problematic to eat them rosted.

What about gently heating some onion, garlic, and/or spices in butter or coconut oil and then pouring the warm mixture over the raw almonds or walnuts (just skip the roasting)? Would this be an acceptable work-around?

how much is lost in pecans? like got some peacans and see accidetly took the unroasted bag so i put small amount pink salt and olive oil and water and mixed it and air fried them. or say can you roast the nuts at a low temp slowly or a high temp fast be better?

What about soaking nuts in salty water before you roast? A quote: "Why You Should be Soaking or Sprouting All Your Grains and Legumes Throughout history, grains have either sprouted accidentally by being left out in the elements after harvesting or intentionally by our smart ancestors to make them more digestible. Modern techniques have eliminated happenstance sprouting but this has not been a boon to our health. Phytic Acid - The Anti Nutrient Grains and legumes have a built-in growth inhibitor called phytic acid, which keeps them from germinating until temperature and moisture conditions are just right. Phytic acid, also called phytates, blocks phosphorus absorption and binds with other minerals, such as calcium, magnesium, iron and zinc, making them unavailable as well. It also inhibits enzymes needed to digest food. Over consumption of phytic acid can lead to mineral depletion, especially for people in developing countries where grain based foods make up the majority of the diet. So What Exactly is a Sprouted Grain? A sprouted grain or legume has gone through the process of partial-germination. Our ancestors understood the unhealthy dynamics of raw grains and legumes, hence their food preparation techniques included soaking, fermenting, sourdough-making, and sprouting to neutralize the phytic acid and increase the nutritional value and make digestion easier."

Super curious what the nutrition/health risks of using almond butter and almond milk in cooking and baking. My favorite keto cookies use almond butter as a base and bake at 375°. 😦

Wow! Good to know. I've always loved roasted pecans.Guess I'll have to change that now. What about cashews and brazils? Are they ok to roast?

I usually sautee my walnuts with onions, Serrano chilies, uncured andoullie sausage, and spinach for 3 to 5 mins on medium heat then add my scrambled eggs. Does that make my walnuts toxic?

Could you possibly do a video on how to diet correctly and if keto is right for endomorphs? Or possibly all 3 body types so it’d be informative to a wider variety of people? As an endomorph I can lose weight but gain it back within a blink of an eye. You know the science behind a lot so hoping to get a video on the subject
