Years ago before I got into the food business, my wife and made a similar recipe for a family Thanksgiving dinner. We used red potatoes and rosemary instead of thyme. Everyone LOVED them! It's a great way to do potatoes.

Just an excellent recipe, and it looks very healthy. I am gonna do a baked tilapia dish and serve these potatoes with it. I guess this would go okay with a fish dish. Thanks so much for posting this. :)
Hi. In the restaurants/hotels we would roast on a sheet pan lined with parchment paper. The spuds will not stick. Also, try a glass or ceramic casserole dish.

Whenever I go to a restaurant, especially breakfast places, I often rate the quality of the food by the quality of the roasted potatoes. Rarely are they ever done really well.
Mmmmm.....!!! They have to be the best looking roasties I've ever seen. I noticed you didn't remove peel. Does it get a bit tough or not? Really want to make these but my 8yr old hates the peel. I love it though.
@sharkate7 The potatoes should have a little crisp texture to them and should be soft in the middle like a baked potato. Did you have your oven at the right temp?
What a great tip mc12188! Duck fat is also great for frying your french fries! If you have ever had late night fries at Thomas Keller's Bouchon in Yountville Ca, you know what I mean!
I like to think the cast iron holds its temp and provides a nice even roast on the potatoes. I find they come out better when I use this. Thanks for the nice comment here, and on the home page. I really appreciate it. Jason
I will try these, the best roast potatoes are crunchy on the outside and fluffy on the inside. When you mix them it would be better to use your hands rather than the spatula thing, more of the potatoes get covered with the herbs that way.
@sharkate7 The difference could be the seasoning and you mention diners. Are you talking about "home-fries"? If so, these are made by using left over baked potatoes. These are cooled and diced the next day and are sauteed with seasonings.
@kjeoy Olive oil does not have a high smoking-point. It usually is not used for deep frying, but It is great for sauteing and coating food that is roasted in the oven.
Hi there. The potatoes get a little crisp on the outside, and the inside is like eating a baked potato. If you over cook these the will dry out. Hope that helps. Thanks for question! Jason
