Here's a simple vegan dish or a side dish recipe for baked potatoes, perfectly browned on the pan in the oven. They go well with roast meats (lamb, chicken or beef steak) but also with certain types of grilled, baked or steamed fish. The practical part is that we can boil the potatoes (in their skins) the day before, and then brown them on the tray just before serving.
INGREDIENTS:
approx. 1.5 kg boiled potatoes in their skins (baking or salad varieties)
2-3 sprigs of fresh rosemary
5-10 cloves of garlic (to taste)
salt
olive oil
