Roasted Red Potatoes are basic country cooking at it’s best. They have been dressed up over the years with all kinds of fancy words and spices, but it’s hard to beat the flavor of the basic recipe and if you ignore all the fancy words, there is not much that is easier to cook.
Taters have been the hillbilly go to in hard times for centuries. They have saved generations from starvation, so the more tater recipes you have, the better, and this a good one.
These taters are perfect as the main course for an all veggie, fresh from the garden, summer dinner or an easy side dish with any meal for basic vittles to a fancy dinner. They make a great substitute for frozen French fries or tater tots and are better for you.

1 ½ pounds Red Potatoes or Any Potatoes
2 tablespoons Butter or Oil
Salt and Pepper to Taste
Optional:
Onion Powder

My Granny shared with me the hardships her parents went thru to get to homestead during the land rush, loosing twin babies traveling in a buckboard wagon, and a 2 yr old. They lived in a half dugout, on and on. It would be a book. Thru out the years growing up, I was not spared all the hardships all the way down thru generations. The most important things I learned, was to save any portion of my $ no matter how small, always pay extra on house payment(sometimes only $5.) Build up can goods , dried pinto beans , oatmeal, rice for emergency supplies. I’m 74, no mortgage, and am house bound (covid danger). Find old timers to talk to, and they will tell you this “ain’t the first rodeo, nor the last” . Prepare in times of more for times of less, and call on Lord Jesus. He has NEVER let us down🙏🏻

You are such an inspiration. I appreciate your words of encouragement. I think we all need to hear “It’s going to be all right”. As we were going about our busy lives at the beginning of the year and some seldom gave God a thought, then things came to a screeching halt! Suddenly our lives were stopped. The comings and goings and meetings, trips, travel and face to face interactions were no longer. In the same way our children sometimes get so busy with play and distractions that they do not hear us, I wonder if our Heavenly Father looked on us as our “busyness “ stopped and said, Do I have your attention now?

I grew red potatoes this year and I am just starting to dig them out. I will definitely be using you recipe for them. You are so right about our nation and praying for forgiveness. I feel we are in for more troubles though. I have always heard to about Sodom and Gomorrah and God having to apologize to them is He doesn’t punish us. I love roasted potatoes like this. If you use regular, russet potatoes, try using peanut oil as your fat. If you ever cut and cook your own fresh/french fries, use peanut oil. The Taste is amazing. I also use Lipton Onion Soup mix. 1 envelope with about 1/4 cup of oil... Roll the cut potatoes in it and roast the same way. It's like potato onion candy. I keep a fruit jar of bacon grease for all my cooking needs. 👍

Hi Becky. I stumbled onto your videos a few weeks ago, thank God, and absolutely love them. Your recipes and stories remind me of my own childhood. I'm not normally "long-winded", but I think you'd better top off your coffee mug because I feel that God wants me to tell this story... Yesterday, a friend of 30 years that I hadn't seen in quite awhile, stopped by out of the blue. He talked me into (I'm getting a little reclusive in my old age) going for a Sunday drive. On our way to the wildlife refuge, he mentioned a sign that he'd just seen in someone's yard that said "Psalms 91." We enjoyed our "tour" of the refuge and were headed further into that side of the boondocks when we had a flat. That refuge gravel is a real pain in the tires. He used his roadside compressor and put just enough air in it to get us back to town. The plan was to put a can of "flat tire fixer" in it, go to my house & get my truck, take his home and continue our journey from where the flat occurred. For no particular reason, we left his driveway and ended up on the opposite side of the boondocks. And there it was....another sign. In our neck of the woods, you don't see a lot of signs in yards, so to see 2 on opposite sides of the "country" and knowing they're probably the only 2 here is a bit unusual. I said "We have to look that up because that's a sign from God." Psalms 91. So, today, I am catching up on 3 weeks worth of your videos and you show a different passage (I'll have to watch the video again & look that one up too) that says roughly the same thing. I feel like God is trying to tell me something. Anyway, thank you for your patience, faith and conviction to share it with us. Please keep up the Good Work and may God bless us all.

I cut my potatoes the size you do. Then I boil about 10 minutes and drain well. Roast them in an iron skillet on top of the stove in a little butter and olive oil. I sprinkle with paprika powder. Paprika makes them crispy and gives a nice brown color. I cook them over a med-low flame for about 20 minutes. The slower cooking dries the outsides as they cook, makes them crispy and evenly browned and not burnt.

Amen!!! I was talking to a friend the other day who just lost her husband. She told me every night they would sit down and do a word search together in the Bible. They started with the word forgiveness. They would find a verse about that word and they would write it down. That's an amazing idea to do as a couple.

Bible verses and your recipes. Michigan potatoes have a thin skin too (white potato). Oh so right on the pink salt. Better flavor then any other salt. It’s what I use. Yes, this is a very stressful time and so unbelievable what our world is going through. God don’t have to apologize for nothing! It’s us who need to be sorry for how we act! God is trying to get our attention that we need to share Him more with the unsaved. And for those that don’t know Him to open their eyes to Him!
