Yes!! As a Greek person I thoroughly approve, especially of the use of Kalamata olives. I can easily imagine kumquat pairing quite nicely with Greek ingredients! A++ for this one and καλησπέρα 🇬🇷🇬🇷🇬🇷

Gluten free bread is usually small because it doesn't have as effective of a binding agent, so smaller loaves hold together more easily.

Exactly this. Gluten provides the structure to make larger products not collapse in the middle, so gluten-free stuff tends to work better smaller. Kinda like making a bridge out of stone vs reinforced concrete.

Nothing against gluten-free bread, glad it's there for people who actually have a problem with gluten, but... well, I think the first substitution when recreating this sandwich should be obvious.
