Russian Ball Tips

In today's tutorial I will show you how to use the Russian ball tips.
Ingredients
2 ¼ cups all purpose-flour (sifted)
1 1/3 cups sugar
1 tbs baking powder
1 tsp salt
1 tbs vegetable shortening
1 ¼ cups whole milk
1 bar of butter (softened)
1 tsp vanilla
3 large eggs
METHOD
1. Preheat oven between 340-345˚ F.
2. Prepare cupcake cups
3. In the mixing bowl mix all the dry ingredients
4. Separately mix milk and vanilla
5. To the mixing bowl add he milk mixture, oil, and butter. Beat at medium speed for 1 minute.
6. Add eggs and mix for one minute
7. Bake from 20-25 minutes between 340-345˚ F.
Or until done when tested with a toothpick.

What a pretty effect. Thank you for the video, its the first one ive seen so far that actually showed different effects of piping. all the others have just looked like the same blob of frosting, but yours actually look like petals and flowers. Great Job!

loved your video. wish i had seen it 2 days ago! i love making cupcakes for friends but could never figure out how to coordinate the different steps and i was constantly washing bowls and spatulas and mixer parts!! i baked and decorated 24 cupcakes today and i am completely exhausted and still have one more sink full of bowls, etc to wash!! next time, i will do it YOUR way!! i love the way you made the tops ahead of time and just stuck them on!! you are a genius and a very good teacher. thanks for posting your videos!

I think your best tip was to start at least 3 days ahead and do one of the tasks each day! Make buttercream decorations and refrigerate day 1, make cupcake/cake day 2. Then put on decorations day 3. Makes things much more relaxed. That's what I'm doing for my child's bday this year. Except I did the cake on day 1. Frosting the cake on day 2 and made a huge batch of frosting. Once that is done, I will use the leftover white frosting, divided into bowls and then color each one. Tomorrow I'll do the design stuff. I learned about Russian tips too late. So just using basic tips. And I'm not very good at it either. I can't wait to try the Russian tips next year though!

That was great. Just got them in the mail yesterday, making them for Easter. Thanks for the tip not to do it all in one day. You tips are very helpful, about freezing the flowers and the glueing them on with icing. Really enjoyed that.

Yolanda, it seems like the frosting is sticking to the tip and pulling some of the flower off. If you wipe the tip after each flower, I think you will get a more uniform look. Beautiful work by the way. thank you for taking time to share your work.

I have young people over from church and I am teaching them how to do cupcakes. The you tube is great, but I can't show​ them by a CD. I would love to have the Russian tips and how to use them on a CD.

These came out very pretty. It was hard to see which flat tip you used though to pipe the small flowers. . Went to fast or didn't at all. Thank you.

Hello Terri. Thanks for your comments, I thought it was cleared when I said in the video, "and now let's pipe some rosettes using the ball tips." All the rosettes were piped using the ball tips. I love those Russian tips but if doing cupcakes I spread frosting all over cake before putting flower so it protects cake from drying out.I can see some of bare cake on sides. If cupcakes being ate same day then it probably would not matter.

finally finished my cupcakes this morning but when i took the "fancy" 2 tier cupcake carrier i bought out of the fridge to put the last 2 inside it, the bottom fell off and all my cupcakes fell in the floor. no survivors. just finished making and icing them all again (its 10:30pm!) so i wondered how you transport your beautiful cupcakes? please advise. thanks so much.

Good morning Nancy. I am so sorry for your cupcakes. Things like this always happens. You are not the only one that they happen to, trust me, I've had my share of similar situations and even worse. It even happend to Cake Boss in one of his episode! But no worries, like they say, "live and learn." To transport your cupcakes, you can either buy cupcake carriers, or put them in a shallow box, so you can handle them easily. Good luck. Have a blessed day!

you are amazing, as usual!! one question..is it best to sit or to stand when using these particular tips? they seem to want to stick and pull away some icing. still beautiful, but seems a little tricky. just got my tips and im dying to use them!

Hi Nancy. I usually stand when piping. Another tip is to lightly frost your cupcakes first before you pipe the flowers; in this way the piped flower will attach itself to the frosting on the cupcake. Happy decorating!

Wonderful video, I just got my Russian piping and Russian ball tips in the mail and can't wait to use them. Can you leave the flowers in the freezer overnight? How long does it take them to thaw out once you place them on the cupcakes? Thank you

Hello! Glad you got your piping tips. They are fantastic. You may freeze the flowers overnight. Once you place them on your cake do not remove or handle them with your hands as the warmth of your hand will soften them. Don't leave them out on your for more than 3 hours. Hope this will help!.

how many hours or days did you leave the buttercream rose to dry on the baking paper .inoder to be hard.

What consistency is your buttercream for the rosettes? I have the set that has the rose tips but not the ball tips. Just didn't know if that was stiff consistency as well.

What recipe did you use for the flowers? I have been seeing online where some have used a meringue but it looks really watery, yours looks to be the consistency of a buttercream. I am supposed to get my order of Russian tips today when I get home from work and would love it you are able to; let me know which recipe you used. Thank You.

They soften up. You should keep the cupcakes in the fridge until an hour or so prior to serving if it's too hot or humid. If not, then they will be okay on your table.

Hello Loretta. The candy covered balls that I used and small. They sell them at Walmart and Michael's. they are chocolate covered candy.

Your work is beautiful! My question is if you take three days to make and decorate your cupcakes, as they still fresh? Do you put something on them to keep them fresh? Thanks! I'm anxious to try these techniques!

Hi Connie. Thanks for asking--remember I said; first day make buttercream and refrigerate (buttercream can be refrigerated for days and it keeps fresh); second day make your cupcakes --they will do fine covered on your counter and; 3rd day you decorate. Happy baking!

Hi Yolanda, I have seen your wonderful tutorial and would like to try your recipe. What measurement is a "bar of butter"? I am in the US and our butter comes in a 1 pound box with four sticks of butter at 1/4 pound each, or 113.4 grams. Is that the approximate size of your bar, or some other measurement? Thank you so much. Loved your tutorial and will be looking forward to using my Russian ball tips!

Hi Yolanda, Thank you very much. That's what I thought, but wanted to be sure. I made your buttercream and it was fabulous! I will make your cupcake recipe, now that I'm sure what a "bar" of butter is. Great tutorial on the Russian ball tips. Got my tips, but my first attempt was a bit primitive, and will try it again til I get it right. Keep up the good work and I'll keep watching for your posts.

Hello. Thank you!. I usually keep them in the freezer for 1 hour or so, just before placing them on the cupcakes. However, you can freeze the flowers for a day or so. I don't think you will encounter any problem.
