Russian Buttercream is the simple combination of Butter and sweetened condensed milk, the recipe is so simple but there are a few steps and tips that you need to adapt in order to get the perfect consistency (read them below). This buttercream tastes really nice, it's light, fluffy, and has that delicious condensed milk taste.
Recipe: (Makes 2-3 cups)
1 Cup Unsalted Butter (225g) - Room temperature
1 Cup Sweetened Condensed Milk (250ml) - Room temperature
Tips:
Both ingredients should be at room temperature.
Beat the butter for at least 5 minutes to add as much air to it as possible.
Slowly add the condensed milk to avoid the buttercream from separating.
This buttercream should be used right away, do not let it sit overnight.
If you need to use it the next day, refrigerate it, remove it the day you need to use it, and whip it again.
Buttercream colours well, use gel or oil based colours.
Buttercream sets very well and pipes super well (great for cakes and cupcakes).
Troubleshooting:
If the buttercream separates, pop it in the fridge for 10 minutes and whip it again.

You can do the same with boiled condensed milk, it would be yummy 😉👌🏻

@@ButtercutBakery yes, like caramel frosting. But you need it (unopened can of condensed milk) simmer, uncovered for 1,5 - 3 hours, ensuring there’s enough water to completely cover the can at all times, topping up water frequently throughout the cooking process, otherwise it may be blowing up. Allow to cool completely before opening and using as a caramel

Never tried it with margarine but no I wouldn’t recommend it for hot climate. I would go with an American buttercream recipe 😊

My question...if I need to serve the cake next day or day after Tomorrow, can I fill and crumbcoat the cake with this buttercream before and refrigerate it? And can we use it under fondant....thank u....want to try this for my son's birthday next week...and here temperature is 25 to 26 degrees mostly....

You can absolutely cover the cake a day in advance, the buttercream sets so nicely in the fridge (like swiss meringue), the only issue is that it doesn’t stay too long at room temperature like other buttercream recipes. It can be used under fondant but I personally wouldn’t chose it ☺️ hope this helps x

What if I only have salted butter, what should I do?

Salted butter will leave an aftertaste to buttercream, this is why i always use unsalted butter
