An airy dessert with strawberry flavor. Homemade zephyr (marshmallows) made from fresh strawberries, without the addition of applesauce and without a thermometer. Custard zephyr (marshmallows) turns out to be 100%, the recipe is not complicated.

Strawberry Zephyr (marshmallows) 14 large halves - 500 g
Water - 100 ml
Sugar - 200 g
Agar-agar (strength 900) - 9 g
Strawberry puree - 200 g
Egg white - 2 pieces (65 g)
Salt - 1/3 tsp
Sugar - 100 g
After boiling, cook the syrup for 4-5 minutes over medium heat

These will be wonderful for CHRISTMAS ! I am thinking of dipping in dark chocolate and others I’m thinking of coating with Toasted Coconut, and trying different purées to coordinate with traditional Christmas flavours - such as Clementine, Keylime, etc. Thank you for sharing…looking forward to future recipes! Sie brauchen Agar mit einer Stärke von 900 Blume, wenn Agartin schwächer ist, hält es Marshmallows nicht und es wird weich und klebrig sein

You need to work quickly, the agar stabilizes at 45C, it takes about 3-5 minutes. Zephyr are stored for 2-3 days in a box with a lid.

I’m not an expert, but I have seen some people just use jello instead of the fruit purée. So maybe instead of flavored jello you could use a plain unflavored one and put in a teaspoon of vanilla/flavoring?

You can make flowers, but you need to work fast. Store part of the mass in the oven at 50 degrees Celsius so that it does not freeze.

Para colorear malvaviscos en diferentes colores, debe dividirlos en porciones y usar colorante alimentario en gel. Para que la masa no se congele, puede ponerla en el horno a 45 grados C
