SAAS NI MACHCHI
Ingredients
4 pomfret fish (machchi), cut into 3 darnes
2 teaspoons oil
1 teaspoon cumin seeds
8-10 curry leaves
2 green chillies, finely chopped
1 inch ginger, finely chopped
1 tablespoon chopped garlic
2-2½ teaspoons refined flour
Salt to taste
1 tablespoon chopped jaggery
2 teaspoons malt vinegar
2 medium tomatoes, cut into roundels
A few fresh coriander sprigs for garnishing
Method
1. Heat oil in a non-stick pan. Add cumin seeds and sauté for 30 seconds. Add curry leaves and let it crackle.
2. Add green chillies and ginger and sauté. Add garlic and sauté on low heat for 3-4 minutes.
3. Add flour and sauté on low heat for 30 seconds. Add 1 cup water, whisk and cook till mixture comes to boil.
4. Add 1 cup water, whisk and cook for 10 minutes or till the mixture thickens.
5. Discard the scum and add salt, jaggery and malt vinegar, mix and cook till jaggery melts.
6. Increase the heat, add fish darnes, lightly mix and cover and cook for 6-7 minutes or till done.
7. Add tomato roundels, lightly stir and cook for 1-2 minutes.
8. Serve hot garnished with coriander sprigs.
