Parsi style chicken curry topped with crispy potato sticks - learn how to do it the right way with Chef Kayzad.
SALLI MARGHI - (Serves - 4)
Ingredients
Salli as required
4 chicken legs on bone
1 tablespoon oil
3-4 green cardamoms
6-8 black peppercorns
3-5 cloves
1 inch cinnamon
1 medium onion, finely chopped
½ teaspoon cumin seeds
1 medium tomato, finely chopped
3 teaspoons ginger-garlic paste
1½ teaspoons red chilli powder
½ teaspoon turmeric powder
2 teaspoons coriander powder
¾ teaspoon cumin powder
3-4 tablespoons tomato puree
Salt to taste
½ tablespoon chopped jaggery
1 tablespoon Parsi vinegar
Chopped fresh coriander leaves for garnishing
Method
1. Heat oil in a deep non-stick pan. Add green cardamoms, black peppercorns, cloves, cinnamon and onion and sauté till onion turns golden.
2. Add cumin seeds and sauté for 1 minute. Add tomato and 2 teaspoons ginger-garlic paste, mix and cook till tomato turns soft and pulpy.
3. Add 1 teaspoon chilli powder, ¼ teaspoon turmeric powder, 1 teaspoon coriander powder, ½ teaspoon cumin powder and tomato puree and sauté for 1 minute. Add ½ cup water, mix and cook on low heat for 7-8 minutes.
4. Take chicken legs in a bowl. Add salt, remaining turmeric powder, remaining chilli powder, remaining cumin powder, remaining coriander powder and remaining ginger-garlic paste, mix and set aside for 10 minutes.
5. Add marinated chicken legs to cooked tomato mixture and mix on high heat. Add salt, jaggery and Parsi vinegar, mix and cook for 1-2 minutes.
6. Add ½ cup water, mix and cook on low heat for 15-20 minutes or till chicken is done.
7. Top with salli and serve hot garnished with coriander leaves.

hi Lovely Recipe. My mom is a Parsi. Today is Parsi New Year I know this is a authentic Parsi dish called Salli Murgi (Chi) or Salli Boti (mutton). But since we have turned vegetarians. I made Salli Paneer for mom. I know perhaps there is no such dish like Salli Paneer, but instead of chi, I added marinated Paneer.

Robin, how lovely. Add some dried apricots while cooking the gravy. Will add that depth of flavor and compensate for the missing meat a little better. 😉

Always been a fan of fine sali. Will try out this recipe. I suppose it will have a completely different taste if cooked on a wood fire. But you can't have everything.

Yes. I just did. It tastes even better. You might want to reduce the jaggery accordingly as jardaloo adds some sweetness to the gravy. Taste it while you cook.

Lovely. The only suggestion I would make is to marinate the chicken first and set it aside. Then, start the rest of the process. Wonderful dish..

How come chicken will get brown, when you already have wet gravy in pan, also with chicken marination, you did not cook chicken properly as there were raw ginger garlic paste you added, I guess the whole recipe got screwed up. But nice try, it could be better.
