We wanted a healthy dinner and decided on these light delicious salmon spring rolls! They were phenomenal!
1 lb Atlantic salmon
1 avocado
10 rice paper wrappers
2 tbsp avocado oil
Mayonnaise
Sriracha
salt, paprika, garlic powder, chili powder
Slice salmon slice into 2” cubes and season with list of seasonings above- about 1 Tbsp of each. Add 2 tbsp of avocado oil to a pan and cook salmon for 1-2 mins on each side. Once it’s done, set aside. slice Persian cucumber and avocado, set aside.
Shred your salmon with a fork. Mix in your mayonnaise and sriracha.
Add water to a round dish and dunk your rice paper roll in the water for 20-30 seconds until it softens. On a damp working surface lay down the rice paper roll, add a strip of salmon, a piece of avocado, and a piece of cucumber. Roll it up and then fold the end on top of one another. Repeat with the rest of the ingredients.
Add your rolls to the same pan you cooked the salmon in and cook on each side for 2-3 minutes or until they’re browned.
Serve with soyaki or a soy sauce teriyaki mixture and enjoy!
