Hi everyone! I’m here with a new Fishy Friday. So glad you’re watching. Today I’m cooking together with Anouk. We have been working together for the past few months on all the stories about sustainable fishing communities around the world. One day she surprised me with a delicious salmon wellington for lunch. Beautiful responsibly farmed salmon filet from Kvarøy, topped with spinach and salty feta cheese, wrapped in buttery, golden brown puff pastry. A real treat!

Wow... I was sceptical. I thought, there may be mushrooms in the filling, like in Beef Wellington. But surprisingly, there are none. So I'm gonna try this recipe next time, when we are about to cook salmon.

Looks delicious, but is it actually well seasoned enough without adding any salt to the spinach or salmon? I feel like the feta wouldn't be enough?

Hi Bart, Salmon is so hit and Miss with me, I’ve had it and it was DELICIOUS and other times I’ve had it and it was so fishy tasting that I just couldn’t eat it. I know fish should smell like the ocean, but could the differences be in the species of Salmon? Thanks Bart.

It cannot be the species if it smells really different. If it did smell very very fishy I am afraid you should find another fishmonger. It should smell like the ocean indeed. Thank you for sharing.
