Hi Bold Bakers! It's Gemma with a favorite over-the-top recipe that I hope you'll love--my decadent Trifle recipe. It's layers of homemade salted caramel sauce, fudge brownies, caramel mousse, whipped cream & a rich chocolate sauce. I like to make mine in a giant glass Trifle dish but you can make it as big and bold as you'd like. Enjoy! FUDGE BROWNIE, SALTED CARAMEL TRIFLE
INGREDIENTS
FUDGE BROWNIE
4 Tbsp cold and unsalted butter
10 oz Good quality chocolate (72% cocoa solids)
1 1/2 Cups Firmly packed brown sugar
4 Whole Eggs, beaten lightly
2 tsp vanilla extract
1 1/2 Cups A.p flour
1/2 tsp Kosher salt
SALTED CARAMEL SAUCE
1 cup granulated sugar
Enough water to cover the sugar
6 Tablespoons (90g) unsalted butter, cut up into 6 pieces*
1/2 cup heavy cream
1/2 teaspoon salt
SALTED CARAMEL MOUSSE
1 cup Salted Caramel Sauce (above recipe)
2 Tblsp granulated sugar
2 packs (1 lb) Cream cheese, at room temperature
3 cups heavy cream, cold
CHOCOLATE SAUCE
8 ounces semisweet or bittersweet chocolate (I like 72 percent cacao)
1 cup heavy cream
METHOD
First layer to make is the fudge Brownies:
1. Preheat the oven to 350oF. Grease and line a 13x9 inch baking pan
2. Combine the butter, chocolate and sugar in medium saucepan; stir over medium heat until smooth. Set aside and allow to cool down.
3. Stir in the eggs, vanilla, flour and salt
4. Pour Brownie mix into the prepared tin and bake for 25 minutes. Take care not to over bake or they can be dry, and not fudgy
5. When baked, set aside to go cold until needed
6. The brownies freeze really well if you don't eat them all at once
For the Salted Caramel Sauce:
1. Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a rubber spatula.
2. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn.
3. Once sugar is completely melted, immediately add the butter. Be careful in this step because the caramel will bubble rapidly when the butter is added.
4. Stir the butter into the caramel until it is completely melted, about 2-3 minutes.
5. Very slowly, drizzle in 1/2 cup of heavy cream. Since the heavy cream is colder than the caramel, the mixture will rapidly bubble and/or splatter when added.
6. Allow the mixture to boil for 1 minute. It will rise in the pan as it boils.
7. Remove from heat and stir in 1 teaspoon of salt. Allow to cool down before using.
SALTED CARAMEL MOUSSE
1. Transfer cream cheese into Kitchen mixer. Beat at medium-high speed until smooth and no lumps, about 4 minutes.
2. Add in the reserved salted caramel sauce and sugar. Continue to beat on high until fluffy, another 3 minutes., the more air the better your mousse will be.
3. Whip the cream until soft peaks form. Divide the cream in half, half for the mousse and other half for cream layers.
4. Fold ½ whipped cream into the cream cheese mixture. Place in fridge until needed. Taste a spoonful so you know what you have to look forward to.
5. Place the other bowl of cream in the fridge until assembly of the trifle.
CHOCOLATE SAUCE
1. Heat the cream
2. Pour over the chopped chocolate and whisk until smooth. Set aside.
ASSEMBLING THE TRIFLE!!!
1. In a large trifle dish (or a big glass bowl) crumble in your fudge brownie. Leave some bits chunky so you have nice chewy texture to match the soft mousse and cream.
2. Next, spoon over the Salted Caramel sauce to moisten the brownie.
3. Scoop in a large spoonful of the Salted Caramel Mousse and move it around to reach the edges
4. Drizzle the rich Chocolate Sauce over the Salted Caramel Mousse layer
5. Lastly spoon on the whipped cream layer all the way to the edges.
6. Repeat the layers again from the start: Crumbled Brownie, Caramel Sauce, Caramel Mousse, Chocolate sauce, Whipped Cream.
7. To finish I crumble some brownie crumbs and drizzle over the gorgeous sauces.
8. Dig deep down to enjoy all your lovely layers together. Mix it up and try your own twist on layers using your favorite flavors.

Moid Ali 1/4 Cup of water, or enough to wet all the sugar. The more water you add the longer the caramel takes to cook, thats why I try not to add too much. Hope this helps Moid :)

Hi Gemma, just watching some of your videos. I really love this dish. To me this is a trifle bowl - big old and extra special XO! I have always wanted to make a trifle since I found out what they were. This one looks like it would be so yummy. I think on one of my confident days I just might be able to do it. I'm a bit worried about making the caramel sauce, but you explained it so well that I'm willing to give it a try. Thanks so much and I love watching these videos since they cheer my day. XO

Made this for our Christmas Dinner Dessert. It was a crowd hit. A lot of work, but very much worth it. Definitely a keeper recipe. It can be made in stages (the brownies and caramel the day before etc.). Thank you Gemma!! Warning #1: It is delicious but VERY rich. It fed 10 at our dinner and we didn't even dent half of it. Warning #2: Pay close attention to the colour of the sugar for your caramel. The darker it becomes, the stronger flavour your caramel will taste. If you wait too long (sugar too dark in colour), it will taste like a burnt sugar caramel. Still good if that's your thing, but I prefer it just after turning golden and before getting very dark brown (it's a personal preference thing). Warning #3: When making the caramel, add your butter all at once and then whisk in (as Gemma says). Have your butter and cream set aside at room temperature if possible (not cold), this will help with the caramel staying emulsified, and not separating. Warning #4: If using salted butter, omit adding salt at the end. Warning #5: Gemma`s recipes are fantastic, but her Irish accent alone will make you want to come back to this channel. :)

Andy Williams Absolutely Andy. it actually will taste better made the day before because the flavors will have married together over night. Make the brownie early and stick it in the freezer until needed. Also make the slated caramel sauce in advance. it lasts for months. :)

First of all let me tell you this is a masterpiece! Only thing missing in my opinion is Pecans, I'd surely add some to my Trifle. Gemma, you must have amazing restraint when it comes to eating all of your delicious recipes. You are nice and fit looking and so pretty along with having a great personality. But I've struggled with my weight all my life and although I love to make and eat these recipes I have to push myself away after just a few bites of anything that I make or it will end up somewhere on my body with added pounds. :( I still make these recipes mainly as treats for my Husband. He does not suffer with weight issues or high cholesteral, etc. I've got to say you are my absolute favorite Chef on youtube or anywhere else. BTW that caramel mousse looks so amazing I can think of many different ways to use that ingredient besides in this one. :) Thanks for all you do!

Yes, I definitely have to work hard being around so many treats. Fortunately, I have great neighbors who enjoy getting plenty of samples of what I make. Your Salted Caramel Sauce recipe on your site is totally different from the one in this video. Please comment on this. Also, your website list of ingredients says 1/2 tsp salt, while the instructions say 1 tsp. Which is it? Thanks.

We made this for my husband's birthday. We made only half the recipe and it fed 9 people with leftovers for the next day! What a majestic dessert! It's a celebration! But for health reasons I would make this only once a year or so as its very very rich. I'm in love with your salted caramel sauce.....its gonna be permanently in my fridge! 😉 and your fudge Brownie is simply divine! Best Brownies ever! It goes so well with the caramel sauce!

This is nice, but I have a better idea, a pancake trifle. One great thing is you could use a pan to match the size of the dish the trifle will ultimately be in. The problem I see with all the trifle recipes on youtube, is they use uneven layers with pound cake. This one is a little better, but you could create really flush layers if you used the perfect sized pancake. I would stick on with the pancake concept and use a mix of traditional trifle fillings like fruit berries, and pancake toppings like maple syrup, whipped cream, and butter, and probably you could even make pancake layers of blueberry pancakes. The other option would be to make marshmallow pancakes, and a smores trifle concept. In that one you could have multiple grain layers, by switching between marshmallow pancakes and graham crackers. Basically, I could make a better trifle than anyone with my idea.

Fantastic recipe!! I did leave out the whipped cream as I wanted the salted caramel mousse to be main flavor and I made the mousse with mascarpone instead of Philadelphia cream cheese and it all turned out incredibly well🍨
