Respectfully Chef John......and this is a milestone for me.....I add a little honey as the sugar starts to melt to avoid crystallization (which can happen if the melted sugar splatters on the lip of the skillet) and I add vanilla extract after the butter but before the cream. After all, I am the boss of my caramel sauce.

I've been trying to make proper caramel sauce since 2007, but due to poor directions on the recipe, I failed over and over. It said to mix all the ingredients, then cook while stirring until dark brown. Thank you for this video. I made 2 gallons a few days ago. :D
The first time I made this, I let it go too dark and it had a burned taste. Remember that it will keep cooking and darkening even after the heat is off. When you get it right, it is much better than anything you will find in a store.
Just made Chef John's version of caramel sauce today and it is a winner. I've tried other recipes and have resorted to using corn syrup in the past to prevent crystallization. None of them have turned out as well as this one, which was silky smooth and did not crystalize at all. I think mine turned out about the same color as Chef John's, maybe just a touch darker. It has has a little more bitterness than I usually go for with caramel sauce, but it pairs phenomenally with brownies and ice cream ♥Adding a little vanilla bean paste just makes this fantastic caramel even better. I made this today for the first time ever and it turned out exactly like you said it would! (Did you ever notice that it actually tastes like Wethers' hard candies? Which those are my absolute favorite candy of all.) Thank you so much for such a great recipe! I made this to put in an icecream cake and it was amazing so thank you :) I was able to make it on the first try with a regular sauce pan it just took a really long time for the sugar to start melting
I don't know how many times I've burned caramel. This is the only recipe that was made so easy and clear...that it came out perfect. I can't have ice cream without caramel. John, you saved my life.

Made this a couple of days ago, and.... OhMyGoodness! Amazing, addicting, delectable, delicious. And did I say amazing? I sprinkled some kosher salt on top after it had chilled, so it stays on top, nicely (until you take your first spoonful... Hmph.)

John. My grandfather raised me on something I'm just goin' nuts to find a recipe for and can't. Butter rum. We used to able to get it in 'Life Savers' or even bags of hard candy. I'd like to incorporate the flavor into a caramel sauce. Ya just can''t find it anymore which is sad. If I but had a recipe...... I'm currently using variations on hot buttered rum sauces but just can't quite get the flavor profile I'm after. Any ideas please??
You didn't say what you were using in the recipes you've been trying, but you may need to use butter rum flavor oil. That's what you use to make butter rum hard candy. Lorann makes this oil and so does Torani. You can get it online; just Google search. And, by the way, Life Savers still makes that candy. You can find in places like Walmart.

What I've been doing is essentially forming a standard caramel at the end of which I stir in a dark spiced rum along with vanilla, salt, and rum extract (not an 'oil'). It comes close but not exactly the cigar I'm looking for. Oh, don't get me wrong, it's decadently rich. But it's just not quite that old 'butter rum'. I mean, damn. You can get recipes for any and everything on the net including how to build a nuclear device but not 'butter rum' candy?? That's just not right. Lol. Again, thx. I'll check out the oils.
