Sambal Stingray - 三峇魔鬼鱼
As long as you're in a seafood zi char stall, the ever-famed Sambal Stingray is the one seafood dish most locals will order! As everyone knows, Singaporeans LOVE spice, and how the chili blends so perfectly with the stingray just makes you drool.
How we approach our recipe is to create our own blend of Sambal, from scratch. There's a huge difference in flavors when you do this, and we dare say it is ever so worth the effort, guaranteed!
Grill this baby on a banana leaf, and you'll be amazed at the results. Go get grilling, and happy cooking!

Hello... I love sambal stringray in singapore and so happy I found the recipe here. In my country I cannot find the same shallot like your one. I think your one is with yellow skin right? Can I subtitude with red onion?

I wrap the fish in aluminium foil with the banana leaf in between and cook in toaster oven, so I dun have an oily kitchen after tat😅

Yes you can use any other fish with this marinade if you like. There is no specific fish to reccomend but using a filet cut would make the process easier for you :)

AreUSureItsRelevant The banana leaf adds on a nice fragrance to the stingray. Try grilling them over banana leaf, it will taste even better!

AreUSureItsRelevant If you do not have access to Banana Leaf - try using Baking Paper - like the Reynolds brand in USA - which is used for Baking Cookies and the such - you can use cocktail sticks or toothpicks instead of staples to seal in the ends :)

U still can cooked it without Belacan. Cook is like an art. U can fish oil, ikan bilis cube or chicken cube and so on. It will still taste better. Or b4 i forget, some use chinese wine for taste. Ok good luck!

My helper and I suffered from the fumes of burnt banana leaves and sambal. Did I do something wrong?

Hey V! Oh dear :( Hope you guys are alright - hmm, one of the things we can think of is that the fire was too hot for the banana leaves causing them to burn up before cooking the stingray proper. That would explain both the burning the leaves and sambal - hope this explains? Fire control is super important when it comes to cooking Asian dishes 😆

@@themeatmensg Do you reckon more layers of banana leaves will help? I used 1 layer(folded in half) initially before adding more when i realised it burns quickly, although cooking time was extended and some parts of the fish was tough. Seems like once it burns, lowering the fire won't help and the only way is to start over with fresh leaves. Will definitely try again as I can see the potential once I have mastered the technique! Thank you :)
