Save DOUGH with DIY Energy Bars

Making your own energy bars for hiking or backpacking is easy and affordable. On my Pacific Crest Trail hike I consumed up to five energy bars a day at a cost of $3.00 to $4.00 a bar. Today I share two easy to make recipes that I think are winners.
Please feel free to add constructive comments. I freely admit I don’t know all the answers and have blind spots. Feel free to enlighten me. We may disagree, but I’m not afraid of robust conversations.
Recipe 1: Holy Mole
So here is what you need: Tools, a 9 x 13 baking dish, food processor, mixing bowl, and spoon, cutting board, and knife. I also package my energy bars using a vacuum sealer. I pre-heat my oven to 350 degrees. For ingredients you’ll need to simply mix together
2 cups of almonds, I chop them ahead of time,
3 cups of rolled oats, I cup of green pumpkin seeds,
2 cups of mejoli dates,
I cup of almond butter,
1 cup of dark chocolate chips,
1 cup of agave syrup, and
½ cup of coconut oil.
I cut my almonds a ahead of time to make it easier on my food processor. The same with the dates. I mix all of this in my food processor. I pour these ingredients into a 9 by 13 greased baking dish, and place a sheet of parchment paper over the top and press the ingredients down firmly with the bottom of another baking dish. Bake for about 30 minutes and let cool. Slice into twelve portions, vacuum seal and store in the fridge of freezer before you’re ready to head out. These are stout, calorie rich energy bars. This recipe makes 12 energy bars and according to my calculations each bar has about 440 calories.

Recipe 2: Chocolate Energy Bars (No Bake Recipe)
Tools, a 9x 13 baking dish, food processor, mixing bowl, spoon, cutting board and knife, and I package my energy bars using a vacuum sealer. For ingredients you’ll need to mix the following:
4 cups of chopped medjool dates, which I cut ahead of time
4 cups of raw cashews, which I also chop a bit.
2 cups of raw almonds, which I chop ahead of time.
1 ½ cups of unsweetened cocoa powder
½ cup of coconut oil
1 cup of shredded coconut
4 tsp of vanilla extract
Three tablespoons of water.
1 tsp of kosher salt.
Once you’re done mixing these ingredients in the food processor, spoon it and flatten it out onto a 9 x 13 baking dish covered in cellophane and then place another sheet of cellophone on and another baking dish on top to smash it down. Set the mixture in a fridge of freezer, cut into 12 pieces and vacuum seal. Each energy bar has approximately 470 calories each. These energy bars taste almost like brownies.

Food brings strangers together. I always share as a Nomad when I meet people. Just clean food with minimal ingredients. The fact that they’re vegan rarely comes up. Stay healthy. Stay moving. Keep sharing friend!

@@akwild1 if it’s any consolation, Ray, the Aurora was really impressive here in Tasmania but because I had to work the next day (which involves driving tourists to Cradle Mountain and showing them around) I was in bed early. The thought of falling asleep while driving a bus full of passengers is the stuff of my nightmares. I’m confident it’s only the beginning of a. Impressive solar maxima so other impressive auroral displays to come.

Looks delish! Need to try these. Wondering if not using the oil would make any difference. I try to stay away from oil. Think I'll experiment a bit.

Hi Maureen. I imagine they would be quite dry without the coconut oil. Please let me know if you come up with a variation of the recipe. We had a good hike today, and I carried along a couple of energy bars I made. They were delicious, although Burn seemed to think they were doggie treats.

Oil is healthier than the sugar from the dates as long as it's not highly processed vegetable oils due to toxins from heat. The coconut oil is good and healthy in small doses and best if cold pressed like good EV olive oils.

Question: How many weeks or months do you think these energy bars would keep at room temperature once they are vacuum sealed?

That's a good question. I freeze mine before taking them out. I have carried them for a week on the trail without any problems, although the second recipe can get a little gooey if it gets too warm. I worry about my prepared foods going rancid, although that has yet to happen, so I keep things frozen before I head off on a trip.

I live in Alaska, so we pretty much invented high prices. I use good ingredients so the cost might be up there, but I don't think it's as high as what you would pay for other high-quality energy bars. There is a sense of pride eating what you made during a hiking or backpacking trip. Sorry I couldn't be more specific.
