Looks yummy. I'll add this to my "try me" list. Can you explain "brightness " as it relates to cooking. I don't understand the adjective in this fashion. 🤔
I think mushroom would overpower the taste, if used exclusively. Mushrooms are very strong. I would make my own veggie stock (I can't recommend a store bought one, I'm not even in the US) using more neutral veggies in the first place, like potato, carrot, celery or celeriac and only use just a bit of mushroom powder if wanting. This should mainly taste like onions, without a second ingredient coming close.
@@syrahsmythe If you are a strict vegan, you want to make sure your wine is vegan. otherwise, most wine is processed using eggs. Stores now will label if the wine is vegan.
