Today I made a batch of traditional Scottish rolls :) Also known as Scotch rolls, morning rolls (because traditionally they get delivered to the shops and sold in the morning) or in the West, we call them ‘Morton’s rolls’.
You’ll have noticed if you watch my meals of the week videos on a Sunday, we have soup & rolls quite often…and these are the rolls :) Absolutely delicious with an almost chewy texture and signature sandpaper top :) Fill these with whatever you would typically have in your sandwich…or simply have them with a generous scrape of butter!

What I used: Will make 10-12 rolls
800g (28 oz) Strong white flour
1 Teaspoon salt
50g (1.7 oz) Lard
500ml (15.5 oz) Lukewarm water
2 Teaspoons sugar
7g (0.24 oz) Fast acting yeast
Semolina or rice flour for dusting

My family went on caravan holidays in the early to mid '70s to places like St Andrews and Dunbar. My mum would send me to the shop in the morning for 'well-fired rolls'. They were sold on big wooden trays. Thx for this memory.

I called them Mortons rolls, I used to work for Mortons Bakery in the Drumchapel Area of Glasgow. Your Recipe is almost exactly the same as Mortons and they look identical.

grew up in greenock and was a van boy for aulds in the early 70,s,we always had mortens rolls in the mornngat home , the driver for mortons then was a guy called wee alec if im right it used to say temple bakery on the side of their vans,great memories,do you remember barm biscuits?

I've seen another recipe for these where you ferment the dough overnight before shaping and baking, did they do that at Morton's or was it just like this?

​@@duckandflea Nope, I worked there 9yr, no doughs are left overnight to ferment 😂, they use fast acting yeast, then place the rolls in a streamer, and they would lay there till there were ready to bake, from flour to roll took 8hrs, the steam room was the secret to the rolls being crispy

No baps are an english roll a lot flatter and have a more doughy texture also slighty sweet. Definitely not the same .

Just came back from beautiful Scotland and had to make these. Came out perfectly and such an easy recipe. One question, can I use Crisco instead of lard? Best wishes from the US.

They won’t be quite the same. They have lard right by the Crisco here in the states, it’s just a different brand than she uses.

I made a batch of these last week. As an exiled Glaswegian in England for many years I still miss them! Very easy to make and popped them loose into the freezer. We have had them several times already this week for lunch.

Quick tip: Use parchment paper, rather than grease proof paper for baking as it doesn't stick!

What’s the difference between the two? I have grease proof paper and everything sticks to it. I’m assuming you use the greasy side up?

Keep your old butter packets and use them to grease the side of the greaseproof paper that you don't want to stick. Works particularly well with sponge cakes (put a couple of long strips below the paper layer and you can use them to lift the sponge out of the tin).

Why are we loosing our Scottish rolls whenever you go into a cafe coffee shop they serve up the French bread sandwich or the Panini not a patch on the Scottish roll some eateries serve up rolls that are more like the Irish Bap far from the same as the lovely Scottish rolls we love. I would love to see a come back of our Scottish rolls when Scots go to work abroad the food they always miss is square sausage and the rolls many times Ai have been asked to bring these coveted items for Scots living away from home so why don’t we see our rolls on the menu of coffee houses or cafes in Scotland. Not the doughy Irish version.

NOTHING anywhere in the world compares to morning rolls. I love to cook & bake, but have long been intimidated by the thought of baking these myself. I SO enjoyed this simple recipe/video & I intend to "slay the dragon" & attempt this recipe. Thank you!

Do it! Go slay that dragon!! You will be so proud of yourself! And this is the perfect first-time yeast bread recipe. It’s simple, and almost fool proof. The key is not to continue adding flour when you’re kneading. Adding too much flour will make a heavy and dry end result. When I first started baking yeast doughs, I wish someone had told me this. So many times, you see people kneading with lots of flour on the board, unless it is too wet, adding that flour isn’t necessary. Dough is better off a bit wet than adding too much flour and end up with a hockey puck 😂

I first tried your recipe over a year ago and it has become our favourite for yeasted rolls. Easy to make, tasty, visually impressive and they keep amazingly fresh. I make them most Saturday nights, fridge the shaped rolls and bake them Sunday morning. They are splendid! Thank you so much. 🥰

I cant believe how good they look cooked in a domestic oven. I already make my own sliced sausage I am going to make these rolls and drop a slice and some ketchup in them. We can't get the morning rolls or the sausage in England and the ketchup is no fun on its own.

I usually buy rolls from Aldi, I made these and I can never buy another roll again as after tasting these it's ruined the buying experience for me. I will made these again as it was easy and they taste amazing.I just tested two of them out with smoked bacon and egg, I'm stuffed as they were pretty filling. Thanks for making this video.

They look great. However, I must point out that fast acting yeast does not need to be started in the sugared water - that’s why it’s called “fast acting”.

Yum, love a nice soft Morton's roll, the basis for many a braw piece! Could never quite understand the folks who used to as for the "hard fired" ones though!? Find using the lard in making them helps them keep longer too [though they rarely last long 'round me]. You should give making Butteries, also known as Rowies or Aberdeen rolls a go. Its not too difficult & they're my ultimate Sunday morning treat. Served warm & slathered with butter. Though they make a braw Scottish Croque monsieur/Madame too! 😋 Good luck on hitting the 100K soon.

I don’t think actual Morton’s rolls have lard right? They are suitable for vegans etc so maybe they are slightly different

Just adding a big thanks for this recipe. I've now made these a number of times and the rolls reliably come out really well. Usually use unsalted butter instead of lard (otherwise have to buy lard specially for this). Have made with other flours for variety (granary, wholemeal, khorusan, though always keeping at least 50% strong white) and again they come out consistently well every time, have not gone wrong yet.

Did this today, the dough was pretty wet so added a little more flour. They were ~OK~ compared to the store bought ones, mines turned out pretty stodgy. Not sure if they needed longer in the oven, less flour or if its was my kneading technique. Any ideas? I halfed the recipie as didnt need that many rolls, assuming that would be ok?

I still miss the rolls from Irvine's the Bakers (West Richmond St, Edinburgh) coming home from dancing at 4/5am, knocking on the deliveries-door and buying a dozen for Sunday-breakfast but they were so warm and delicious you ended-up going back to buy another 6 coz I'd wolfed 7/8 of those beauties ! The only decent roll-shop left in Edinburgh (IMHO), is Storries of Leith but they're up for sale so who knows what will happen ? I loathe the air-filled efforts all the super-markers make, they're vile !

Hi, I grew up in Kinghorn, Fife. My uncle was Miller the baker and I spent many a Saturday helping out in the bake house. They made hundreds of these rolls everyday. There is nothing better than these rolls while they are still warm. I never knew the recipe till now and looking forward to making some. I have a question, the Lorne sausage you showed in this video, was it sausage you made or shop bought? It made my mouth water just seeing it. I will be trying out your Lorne sausage recipe if it was your home made recipe. I live in California now and plan on trying out a couple of your other recipes. Thanks

OMG love that you shared recipe.. I recall when I was wee going with my Uncle not a blood one but you understand I’m sure Anywhoo we would walk done the lane to pick up the mornin rolls! Lol I think that my uncle and the baker had a bit of a trade going on as my uncle usually brought a cabbage turnip or onions etc Thankyou not only do I have the recipe for my fave rolls oh you can purchase here Ontario Canada but usually pricey and hard to find, but there are many times your videos bring up lovely memories of a different time. technically fast acting yeast doesn't need proving - you just bung it in with the rest of the ingredients and mix

You can’t make anything without good breads rolls etc , you make a burger is nasty if not rite dough just gets soggy and yucky

years ago I had a bad fall and injured my shoulder joints.. sadly I can't knead dough anymore so have to use my stand mixer Thanks for the recipe :)

Made these today, looked good from the top. But the bottom was too flat and forgot to roll them out on semolina, the top had it though , was my first time making rolls though so maybe be better next time

there on the last rise now what an essy dough to work with ...cant wait to taste them i didn't read the adjustment of salt but i doubled the batch and put 14 grams of salt so fingers crossed as i dont use tsp and usually 1 tsp is 7g usually 14 g is enough for my taste but ill know you know 🙂🙂🙂

Beats English bread rolls by a million miles, because English bread rolls don’t taste like bread, I miss the Scottish rolls, as I live in England.
