Secret to Flipping Eggs

The rolling motion of an ocean wave is akin to flipping an egg.
Additional Recommendations:
"Egg Whites should always be fully set, never runny,"
"Always, take into consideration residual heat and carry over cooking. The egg will continue to cook long after you've turned off the stove and plated the dish."
On Fried Egg Doneness:
Over easy eggs (aka, over light): no browning on egg whites / runny yolk
Over medium eggs: browning egg whites / runny yolk
Over medium/well eggs: browning egg whites / jelly consistency yolk
Over hard: eggs should have browning egg whites / fully set egg yolk
* This Episode is dedicated in loving memory of, Chef Jun Lilly. *

To help the egg white cook more evenly, try this before flipping. Cut slits in the egg white close to the yolk and spread it a little and allow the runny egg white to fill in the hole you just created. My mom's been doing that for 80 years.

i'd argue that it's easier with two eggs, just crack them so that the whites fuse together and form pretty much a big two yolked egg and do the exact same thing as the video from there

I don't bother flipping eggs anymore. My hubby likes his yolks soft so he can dip his toast but wants the whites solid. I never knew this method of cooking eggs existed until I got a job working in a cafe. The cook showed me how to make what's called a BASTED egg. She put the eggs on the greased grill and then shot a little water on the grill next to them to create steam and put a lid over the eggs. I do this at home with my non-stick pan. I put a little bit of butter in a small pan, add 4 eggs, and then a little water (1 TBS. or so) and then put a lid on the pan. As the eggs cook the water creates steam and that will cook the tops of the eggs whites. It's so much easier to do than trying to flip an egg.

Cute video. A couple of observations from someone who’s been doing this for decades. Use a round bottom pan without an edge. Nonstick or stainless steel won’t really matter. Use plenty of butter, the eggs should be swimming in it. you want a little bit of air when you flip it if you just roll it at the edge of the pan your risk curling it. Correct if you go too High it splats but too low you get a folded egg. You shouldn’t need a spatula and you should never clean the pan with anything but a paper towel.

It helps to have a properly shaped pan. The one shown has a corner between the side and the bottom. A gentle curve works better. A smaller pan is better as well, because you have better control. If you use a 7” pan, the whites of two eggs will merge, and when they set they can be flipped as one.

Thanks, Gastromonk. On the subject of omelettes... personally, I prefer light and fluffy. I don't want to sound like a broken record, but I like the WH method of aerating your eggs in a mixer before going to the pan. The biggest mistake most people make at that point is adding ingredients like onions or mushrooms or whatever to the eggs in the pan and then flipping the omelette. This is more often than not a disaster. I always liked to flip the omelette then add the ingredients between the folded omelette. You end up with an omelette that looks like the picture on the menu. Of course, by definition you can't do this with a flat grill omelette. To my way of thinking, a flat omelette is just an "unscrambled" scrambled egg.

We all know that it is not necessary to have a Michelin star to fry an egg, fry an egg with plenty of extra virgin olive oil, and "turn the egg as you do", that is a "crime". A fried egg that breaks the almost liquid yolk, a freshly baked potato, a warm and crunchy bread and dipping the bread in the yolk, pure orgasm.

Me, too! One of my all time favorite bands. Saw Jimmy Page and Robert Plant play live in concert - Jacksonville, Florida 1998! They played nothing but hits like "Ramble On" , "Tangerine"!! , "The Immigrant Song" etc... Nice to meet you and Happy New Year

Funny, I thought that was "Stranglehold" by Ted Nugent. I guess Zep stole from more than just the old blues songwriters. Or maybe Terrible Ted stole from Zep.

my secret is to use my full size garden shovel and I always get a perfect flip because the soil on the edge of the shovel grips the egg and helps flip it

Just slide a tablespoon underneath the yoke and flip it. Use the spoon or a spatula to flatten it out, if necessary.

I've been working at a restaurant that primarily serves breakfast for about 4 months now, and I STILL haven't gotten the trick yet. If anything I've gotten worse because of my anxiety over previous failed attempts. I always either fold the egg or I flip it too hard and it breaks.

I don't "flip" my eggs. Instead, I cover them and let the top steam. Alternatively, I do what my mother did and cook sausage or bacon first, keeping the grease. I then introduce the egg(s) and use the spatula to splash the hot grease over the top of the eggs, cooking it.

Get a good nonstick pan. Use bacon grease and a good spatula. If you dont like bacon grease use shortning not oil.

i advise using a big wok for a dinosaur egg, I tired it in a normal frying pan and it overflowed

I don't flip...I leave them sunny side up, but for the last couple of minutes I put a metal dome over the eggs to solidify the top,

If flipping is too hard or you don't feel comfortable, oil the spatula a little and tilt the pan when trying to get under the egg and just roll the egg over.

ya if I did that the oil would hit the burner and I'd have a fire.
