see it will require multifocus at all points u veer into. And when u try to achieve that, u loose the exact detailing unlike when your focus is clear. Now if has to be a photograph in 360, its easier to achieve, as there can be multiple shots at multiple focus and can be easier to produce a perfect output. But while taking a video, it becomes a difficult engineering problem. I think we already have the 2nd or 3rd generation 360 degree video recording cameras, but are much costly and not commercially available. U can check out NASA's 360 videos if u r looking for a realistic experience.
