Learn how to make Sephardic Style Hard Boiled Eggs | Huevos Jaminados! They are the most beautiful, intriguing, hard boiled eggs you’ll ever eat! Made this way by my grandparents and great-grandparents, especially for high holidays, these eggs are slowly simmered in a mixture of strong, ground coffee and golden onion peels. This dark, aromatic mixture fills the home with an incredible smell as the eggs slowly simmer, and it transforms what would’ve otherwise been simple, white eggs, into things of beauty! Once the eggs develop a deep, dark, color, we then create a beautiful, almost marbled pattern on the egg whites themselves. They’re intriguing, beautiful, different, and of course, they’re delicious! Not to mention, it’s a Sephardic-Turkish tradition!
