Sesame Rice Premix is a delicious, flavourful masala powder which can be prepared, stored and used for tasty sesame rice preparation. This traditional premix is prepared using white sesame seeds, lentils and a mix of spices. Lets see how to prepare Sesame Rice Premix & Sesame Rice.

* Approx. preparation and cooking time: 20 mins
* List of ingredients (Sesame Rice Premix):
1. White sesame seeds - 1/4th cup
2. Chana dal - Half cup
3. Urad dal - Half cup
4. Jeera - 1 teaspoon
5. Red chillies - 15
6. Black peppercorns - 10
7. Dry coconut pieces - Half cup
8. Tamarind - 1 ball (size of a lemon)
9. Hing (Asafoetida)- 1 teaspoon
10. Jaggery powder - 1 tablespoon
11. Salt - 1 and half tablespoons
* List of ingredients (Sesame Rice):
1. Cooked rice - 1 large bowl
2. Chana dal - 1 teaspoon
3. Urad dal - 1 teaspoon
4. Mustard seeds - 1 teaspoon
5. Cashew halves - 10
6. Red chilli pieces - 3
7. Curry leaves - 1 sprig
8. Sesame rice premix - 3 tablespoons
* Method of preparation (Sesame Rice Premix):
1. Take a thick bottomed wok/pan and turn on the heat to low-medium flame.
2. Next, add half cup each chana dal, urad dal and dry roast until it becomes aromatic.
3. Now, add 1 teaspoon jeera, 10 black peppercorns, 15 red chillies, 1/4 cup white sesame seeds, half cup dry coconut pieces, 1 ball of tamarind and continue roasting on medium flame until they are nicely done. Then, turn off the heat.
4. Finally, add 1 and half tablespoons salt (can vary as per taste and quantity), 1 teaspoon hing, 1 tablespoon jaggery powder, mix well and allow the mixture to cool down.
5. Transfer the roasted mixture into the mixer jar, grind to make a fine powder and transfer the prepared Sesame Rice Premix into an airtight container, which can be stored for later.
6. Sesame Rice Premix can be used to prepare flavourful sesame rice.
* Method of preparation (Sesame Rice):
1. Into a large wok/pan, add 1 tablespoon oil and turn on the heat to medium flame.
2. Next, add 1 teaspoon each chana dal, urad dal, mustard seeds, fry until seeds start to splutter and turn aromatic.
3. Now, add 10 cashew halves and continue frying on low flame until they are nice and golden brown.
4. Add 3 red chilli pieces, a sprig of curry leaves and fry for a few seconds.
5. Now, add 1 large bowl cooked rice, 3 tablespoons Sesame Rice Premix (can vary as per taste and quantity) and toss all the ingredients. Then, turn off the heat.
6. Tasty sesame rice is now ready to be enjoyed.
