Sev Khamani is a popular Gujarati snack made using crumbled khaman dhokla, tempered with spices and garnished with pomegranate pearls, fresh coriander leaves.

* Approx. preparation and cooking time: 40 mins
* Chana dal soaking time: Min. 4 hours/overnight
* Serves 3-4 persons
* List of ingredients:
1. Soaked chana dal (split Bengal Gram) - 1 cup
2. Green chillies - 6
3. Ginger pieces - 2
4. Turmeric powder - 1 teaspoon
5. Salt - 1 and half teaspoons
6. Eno (fruit salt) - 1 sachet
7. Mustard seeds - 1 teaspoon
8. White sesame seeds - 1 teaspoon
9. Asafoetida (hing) - 1 teaspoon
10. Pomegranate pearls - 1 cup
11. Chopped coriander leaves - Half cup
12. Nylon sev - 1 cup
13. Oil - 2 tablespoons
* Method of preparation:
1. Into the mixer jar, add 1 cup washed and soaked chana dal (to be soaked overnight or a minimum of 4 hours), 4 green chillies, 2 pieces of ginger and grind to make a thick, coarse paste. Then, transfer the ground paste into a large bowl.
2. To the ground paste, add 1 teaspoon turmeric powder, 1 teaspoon salt (can vary as per taste and quantity) and mix well.
3. Next, add 1 sachet Eno, 1 tablespoon water and stir well.
4. Now, grease a large plate (with edges)/cake pan and pour the prepared batter into it. Steam on high flame for about 30 minutes (check to see if it is cooked well, using a skewer/toothpick, before turning off the heat) and once done, turn off the heat and allow the dhokla to cool down completely.
5. Using your hands, crumble the prepared dhokla and keep it aside for later.
6. Into a large wok/pan, add 2 tablespoons oil and turn on the heat to medium-low flame.
7. Into the wok, add 1 teaspoon each mustard seeds, white sesame seeds, fry until the seeds start to splutter and turn aromatic.
8. Next, add 2 cut green chillies, 1 teaspoon hing and fry for a minute or so.
9. Now, slowly add the crumbled dhokla, half teaspoon salt (can vary as per taste and quantity) and toss all the ingredients. Then, transfer onto a plate and drizzle some green chutney on top.
10. Garnish with lots of nylon sev, chopped coriander leaves and pomegranate pearls.
