Among many Chinese appetizer recipes, the Shanghai smoked eggs recipe (上海熏蛋) is among the easiest. This recipe asks to smoke eggs with sugar. It is one of the more traditional dishes in Shanghai cuisine and is my favorite party appetizer to share with friends. No grill involves! This unique Chinese appetizer is quite rare in the West and I believe you can WOW your friends and family with these gorgeous hors d'oeuvres! (Sounds more classy to use French LOL)
The smokiness of this appetizer is quite unique. It has a smoky, sweet, caramelized fragrance. I'm only doing the basic version in this video. If you want to elevate your dish more, it is best to top with black caviar or uni (sea urchin). However, do not use black truffle as a topping. The flavor of truffles is too strong that will overpower the dish's iconic smokiness.
