Description
In this video I sharpen a 10” damascus chef knife that I forged from 1084 and 15N20 steel. I start with a 300-grit diamond stone, and then progress through a 1200-grit and 3000-grit stone. I remove the burr and polish the edge with a double sided leather strop loaded with 5 micron and 3.5 micron diamond paste.
