Brillant! this is my childhood recipe, I've been looking for it for ages except that I can't remember mixing in the fruit juice with the jelly, in any case I will be making this for Christmas. Thanks!
Never stint on alcohol. Robert Atkinson, your Nan got it totally right. I seldom drink but a couple of bowls of decent trifle and I'm beyond all hope.🤣
I have made many while in Australia, they teach me how to do it, this one look lovely I will try to do it. Thank you. It's not always easy to find the Jelly crystals in France, but likely I have found a little Irish shop that have some, so it's perfect. love the Port wine Jelly flavour.
Proper trifle is made with real jam, fresh fruit, and homemade custard. Jelly was a depression/ war years substitute that stuck. But the original is still best.
This is wonderful! I never thought of using the fruit juice in the actual jelly. What would be great to go with the coconut on top, would be using coconut milk with the custard too. I'm so gonna try this this week, Thankyou so much Chef!!
This type of trifle is a family favourite at Christmas time, and the birds powder custard is the best, bless her my gran used to be able to thicken it straight away without reheating it,I am not sure if she used boiling milk but it was perfect every time ,she made up the paste with the powder, sugar and a little milk, then heated the milk when it was ready poured it in stirring all the time and it thickened perfectly,I still cannot make it work lol
This looks amazing. I usually buy a boxed birds trifle but I'm going to make this over the weekend. I have a tin of birds custard in my cupboard. Thank you.
Thank you for this - it looks a really good traditional trifle - my favourite pudding. As I have diabetes I use fruit in juice, sugar free jelly and granulated sweetener inthe custard.
The great thing about constructing a trifle you can use any combination of jelly and fruit. Even make chocolate trifle. Chocolate custard and Swiss roll. And they are so easy to make. And taste amazing.. 👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍🇬🇧🇬🇧🇬🇧🇬🇧
Thank you very much Mr Mooney.... I have been looking for the way my nan did her trifle... i think i have found it :) she used peaches instead of the fruit salad and she didnt put coconut and almonds on the top but everything else is the same i think..... i cant wait to make this :) trifle absolutely reminds me of my nan :)
I don’t put jelly in mine . I put sponge in bottom with a tin of fruit & juice & pour sherry in & leave to soak over night. Add custard, leave to cool & add cream & topping. Best trifle. X
This is the first time I have seen someone use the juice from the fruit in with the jello in these YT videos, it is a good idea. I have not seen anyone use the jelly roll either, I remember my mum using jelly roll for trifle.
This is very similar to how i make my Christmas trifle (that's my job every year). Instead of a swiss/jelly roll, I just buy a square/rectangle sponge pair, and stick the top and bottom sponges together with a decent helping of raspberry (or what flavour you prefer) jam. Then I cube the sponge and layer it on the bottom of the bowl. Instead of using jelly, I just use mixed fruit -drained well-(mixed berrys are yummy, as are a mix of tinned peaches, apricots, mango, pear etc) on top of the sponge bits and then drizzle over sherry and the leftover fruit juices, enough to make the sponges moist but not soaking wet (too wet goes sloppy, and don't forget some juices will still seep out of the fruit). Then I make packet custard and pour it over the top, making sure it gets in between all the gaps between the sponge bits, down the sides of the bowl, be generous. When cold and set, then I add my whipped cream. I am in charge of this every year and my mum makes me make an extra one in a wee bowl, just for her lol. It lasts for days in the kitchen and is even better the next day :-)

I love trifle! What an enjoyable video this was to watch. I think it's so important that a trifle tastes like a traditional trifle as we know it but I think it's even better if it can look a little fresher and more modern! I hope you might like my version of a traditional trifle 👩🏻🍳🎂✨✨
I've poured fruit juice over the cake before pouring the jelly, works quite the same. I prefer cubes of cake and place them roughly then add the jelly and allow to set before adding fruit. I do not completely cover the cake completely to leave it visible from outside. Then I pour custard over before it sets so it fills in any gaps and refrigerate, then add cream last before serving with decorations. I always make plum pudding in a cloth with fruit as usual of course boiled in a large deep pot. Thank you for sharing and I will make your's this festive season.
there's variations on a theme of course but chef mooneys trifle is def closer 2 what most people would call trifle..but of course u can use alot more fresh fruit if u like..very tasty desert..
Lady fingers are good in trifle.Cadbury Chocolate grated is a treat fir the top.I also make my own mincemeat for the mince pies. Not forgetting Christmas cakes which I share with friendsAt 73 years young I have been a professional cook all of my life. greetings from North Carolina and South Yorkshire, England.
My mum used to make the best Sherry trifle ever. The Swiss roll was all but swimming before she stopped pouring the Sherry. It was strong but good and in no way recommended for anyone driving home after the party.
I made this and it turned out brilliant, everyone loved it. I never thought about using the fruit juice for the jelly before and it just adds that extra flavor. Thank you for putting up the video.
Hi this is the best trifle recipe I've tried on the net simple and sophisticated from top to bottom and finished off well looks great tastes better Yum
Now thats what you call a real British sherry trifle, my mum has made it like this for years but she puts grated chocolate and chocolate buttons on top!! You have yourself a new subscriber =)
Sorry if my questions are silly but I have never made trifle, custard or jelly ! But I have been asked to make a trifle for Christmas ! Do you wait for the custard to go cold before you pour it on the jelly fruit mixture? Also, how do you know if the jelly has set ? Or do you wait for the jelly to set before pouring the custard on top? Thankyou.
thanks for watching, let the jelly set before you add the custard, let the custard cool slightly and poor over the jelly, you can then place it into the fridge to set before adding the cream,...CM
Thank you for this lovely trifle video. It's the most appealing I have seen sofar. My question is - I'm not a Sherry fan and I don't have any but I have a fine malt whisky. Do you think that would work? Not too dominating? Dalwhinnie is not very peaty and not too strong but I don't know...
I always add crushed almonds from the bottom also adding layers of cake n custard n fruit reaching the top...endingvwith fresh cream ....yummy grannies way. ..m
nice vid thanks good tip with cream in custard, plus the swiss roll. iwas going to break up some jam doughnuts. trifle is one of those recipes that is hard to make for one. but i love it so most will go to waste
