This is a part of the short animation series where I post math animations which I find to be cool (I hope you do too!)
This particular animation is actually revealing the Fibonacci spiral. This spiral, originated from the Fibonacci sequence, is often compared to the Golden Ratio Spiral, a spiral commonly found in nature. (To be honest I once thought both were the same, but the fact is that this spiral gets closer and closer to the golden ratio spiral as it ventures towards infinity)
MUST Watch this video on Fibonacci Spiral and Golden Ratio: • Nature by Numbers
More on Golden ratio:
The golden ratio is a ratio which is often referred to as "The Ratio of Beauty". This ratio comes up in nature very often and it is very fundamentally connected to the Fibonacci sequence, one instance can be that the ratio of two consecutive Fibonacci numbers approaches 1.618... , as the numbers get larger and larger.

I was always confused on how someone decided on which adjacent edge to draw the next square in. I understand now that its completely up to you and comes from the direction of your curve. You don't always need to start the curve from bottom left to top right you can also start from top left to bottom right. The end of the curve decides which edge you will draw the next square in..Simple.

I need to make an animation like this, what software could I use?

This was the same thought I had 2 years ago. I was somewhat good (rather interested) in math and I really wanted to make these types of animations. I was already into video editing, but I didn't know much of how to use programming to generate these things. So, I doubted that it was even possible. But here I am! I don't know you, nor do I know which software/programming language you are compatible with- so my own path might not coincide with yours on the way to making math animations. But the point is to utilize whatever advantage you have in your skillset and building on that. For me, I already knew a lot about After Effects. I would edit different videos there, so it was a tool I was familiar with. 2 years ago I found out that there was a feature inside After Effects (called After Effects Expressions) that allowed the control of different elements inside the software using programming. That was a game changer for me. I started learning the basics of After Effects Expressions until I was ready enough to plan on small animations at first- maybe generating a sine wave, or even things as simple as generating regular polygons with n number of sides. These small projects inspired me to keep making bigger things.. And in this way suddenly one day I figured out a way to make this Fibonacci spiral inside After Effects! Trust me, I couldn't ever imagine that I'd make this in After Effects 2 years ago. Alhamdulillah! Note: After Effects was not intended for mathematical animations. But it was a tool I was fluent with that's all. You can try a very different approach- you can start with Manim, or other mathematical animation intended languages. They are built for these types of things, so you might find them easier to deal with. It all depends on you, I've seen people use Geogebra to create content- Just keep searching for which path works best for you!
