Today we will cook shortcrust pastry baskets with protein-brewed cream.
Beat softened butter with powdered sugar,
add yolks, salt and vanillin.
In parts, pour flour. It may need more or less.
The dough should be soft and not heavy.
Wrap it in the film and put it in the fridge for two hours.
After the time expires, we take out the dough and divide it into parts. Roll the balls and evenly
distribute them inside the moulds, pressing the dough with fingers.
I have a mold with a diameter of 5 and a half centimeters and a height of 3 centimeters. From a given amount of ingredients
I got 8 baskets. Heat the dough with a fork,
so that it does not spill during baking and sent to the refrigerator for 30 minutes.
We bake in an oven heated to 220 degrees Celsius for 15-20 minutes. If the baskets start
burn on top, cover them with foil. Let’s cook protein-custard
cream or the so-called Italian meringue.
Beat the proteins with salt to stable peaks.
Starting with the low speed of mixer and gradually increasing the speed.
We mix water with sugar and put it on a small fire. It is better to use a saucepan for this purpose
with a thick bottom. After boiling, we do not interfere with the syrup and wait for the temperature to reach
120 degrees Celsius. After that, we remove from the fire and let the syrup calm down for two or three minutes.
Then, the mixer again begins to beat the proteins, pouring syrup into them with a thin jet.
We beat to hard peaks and until the meringue cools down.
At the end, pour lemon juice and mix again.
The cream is ready now. Put it in a pastry bag with a nozzle.
Now we assemble all the parts together: at first we put confiture into the basket,
then we decorate with a cap of protein cream on top and, if possible, you can decorate with berries.
Baskets with protein cream will undoubtedly remind you of childhood.
