Methi Matar Malai
A sumptuous North Indian curry made with fresh fenugreek leaves, green peas and cream. Smooth, creamy, and rich in texture,made especially during winter season!
Ingredients
3 tbs oil
5-6 cloves
8-10 black peppercorns
1 inch cinnamon stick
4 green cardamom
1 tbs chopped ginger
1 tbs chopped garlic
2 chopped green chillies
2 chopped onions
18-20 cashews
1 tbs cumin seeds
Salt to taste
200g chopped methi leaves
1 cup boiled green peas
1/4 tsp garam masala
1/4 cup fresh cream
Method
☘️Heat oil in a pan on medium heat. Once hot add whole spices (cloves, peppercorns, cinnamon stick, green cardamoms) and saute for 30-40 seconds or until you get a nice aroma of the spices.
☘️Then add ginger, garlic and green chilies. Saute for a minute or until the raw smell of ginger garlic goes away.
☘️Add chopped onion and cook until onion is soft and translucent or light pink in color.Add cashews and mix.
☘️Once this onion mixture cools down slightly, take it into the blender. Add little water to make the grinding process easy. Make it into a smooth paste.
☘️Heat 2 tbs oil in the same pan on medium heat. Once hot add cumin seeds and let them sizzle a bit.
☘️Then add prepared onion paste and cook until it thickens.(around 3-4 mins)
☘️Then add chopped methi leaves. Mix and cook for 2 minutes.Add boiled green peas. Mix well and cook for a minute.
☘️Add water,salt and stir to combine. Simmer for 5 minutes.Add garam masala and mix.
☘️Lastly, add heavy cream and mix. Bring the gravy to a boil and then turn off the stove.
☘️Serve hot and enjoy!
