Shredded Potatoes
2 potatoes
An egg
Neutral oil
Sour cream & chives (optional)
1. Peel and shred the potatoes. Or leave the peels on. I’m not the boss of you.
2. Remove liquid from the potato using a kitchen towel that you don’t care about or a salad spinner.
3. Mix the potatoes in a bowl with an egg and two pinches of salt.
4. Make little potato patties.
5. Fry over medium heat until golden. Hit the up side with salt and pepper as desired.
6. FLIP
7. Fry over medium heat until golden. Hit the up side with salt and pepper as desired.
8. Serve with sour cream and chives.
You can also fry garlic in the oil before you add the potatoes.
Alternate toppings include cheese, bacon, or honey.
I also just like these as a side dish.
