Hi chef, is it possible to bake the meringue directly on the aluminum pan? I have a burger bun pan so I was just wondering if it's okay as a mold/baking pan.
Yes you can but make sure you line the burger pans with aluminum foil so you can take the meringue out when they are baked. Your challenge is how to take the meringue out of the burger mold. You have to take them out quickly as soon as they come out of the oven and lay them flat on the baking sheet at once before they harden and crack.

I have an acrylic mold for that. However, you can make your own molds by cutting out circles using your placemats or plywood. Sans Rival video will be out next month.

Wow! I attempted to do this once but I failed. I will try to do it the way you do and not fold in the cashews to the meringue. Btw chef, what if I use non stick paper on ny trays insted of the silicone that you used, do I need to oil them up still so my wafers won't stick? That has been my problem before because I had a hard time removing the wafers from the paper. Thank you so much for sharing your knowledge Chef, all your recipes are amazing! 💜
Sure you can use non stick paper on the tray. No need to oil them. The reason they stick to your paper is because when you folded in the nuts, the oil was released so the egg whites (meringue) deflated and the sugar melted. What stuck on your paper was the sugar that has melted and caramelized. Hope you will be successful with my recipe. Good luck!
Thank you for the tip of not mixing in the nuts to the meringue! Do you think I could use your technique for sans rival? It always deflates when I mix in the cashews! Also can I use the graham ctacker crumbs for sans rival too? PS Absolutely love your channel I am learning so much!

Is the use of milk instead of egg yolks in your buttercream purely for commercial or selling purposes? In terms of taste, would this buttercream taste as good as french buttercream you used for your sans rival?
French buttercream is definitely more delicious. I used this butter icing recipe not for commercial purposes but for ease in making it for the benefit of beginners.

I have tried this recipe before. I had difficulty getting the wafers in perfect shape. Was wondering where you can purchase that acrylic molders here in the US.
We have them custom made and we sell it here in our store in Cebu. You can ask someone who is coming to visit to buy you one. An option is to get a foam pad/mat (with 3/16" thickness) from your craft store and cut the holes with a box cutter. They are not durable but they will work (that was my template for the acrylic molder). Hope I was able to help.
