Ivo’s Pork-Fried Rice
Serves 2
Ingredients
• 1 pork chop
• ½ cup of rice
• 1 garlic, minced.
• 1 TBSP minced ginger.
• 1 small cooking or sweet onion, sliced thin, then diced (about ½ cup)
• ½ cup frozen peas
• 2 TBSP Soya sauce
• 3 TBSP Hoisin sauce
• 2 eggs, scrambled, then diced
• 2 green onions chopped or diced.
• Peanut or Vegetable oil for frying
Process
• Cook your rice (put ½ cup of washed rice in a pot, add 1 cup of water, bring to a boil, add salt to taste (1/4 to ½ tsp) then simmer 5 minutes, then rest 15 minutes with lid on)(or cook with rice cooker) Set aside (this could also be done the day before)
• Slice your pork chop into thin slices, then cut into small bite-sized pieces.
• Sprinkle corn starch on pork, enough to lightly coat
• In a wok or frying pan, add 3 - 4 TBSP peanut or veg. oil.
• Fry the pork till cooked through, remove from wok /pan, and set aside, reserve.
• In the same wok/pan, add the garlic, ginger, and small diced cooking/sweet onion (may need to add a bit more peanut/veg. oil) and fry for 2 - 3 minutes, till onion softens.
• Add the frozen peas, soya sauce and hoisin sauce, mix well, and fry for 1 - 2 minutes.
• Add your cooked rice, mix well and continue to fry 1 minute
• Add your reserved pork, mix well, then add your eggs and green onion, mix well, fry 1 minute
• Remove from pan and serve - delicious!!
