This pork roast is so tender and tasty, and incredibly easy to make!! Very little effort, but delicious results. Pork Shoulder roasts are best, but you can use this recipe on any of your favorite pork roasts - enjoy :)

Ivo’s Pork Roast
Ingredients:
• 1 pork roast (shoulder roast preferred, but any roast will do)
• Salt (1/2 tsp per pound of roast)
• Paprika (1 tsp per 1 ½ lbs. of roast)
• Roasted pepper/garlic spice - to taste.
• Thyme, to taste
• Sage, to taste
• I small onion, quartered.
• 1 or 2 potatoes cubed or wedges (optional)
• 2 - 3 TBSP olive oil
• 2 tsp corn starch mixed with 4 tsp water (optional, to help thicken gravy)
Process
• Preheat oven to 300 degrees F.
• In a Dutch oven (or similar), add the olive oil and the pork roast. On the stove top, just brown all sides (i.e., cook/fry for about 1 - 2 minutes per side)
• Add the onion and potato along side the roast, and with a food thermometer, set it into the thickest part of the roast.
• With the lid on, place the Dutch oven in the oven, and let bake until the internal temp of the pork roast reaches 180 degrees F. (this takes on average, about 30 min./lb. but could be as little as 20 min. per pound or as much as 40 min. per lb., depending on your oven and the roast)
• Remove roast & potatoes to a plate and tent with foil - let rest 20 min
• With an emersion blender (hand blender), blend the remaining onion with any juices. Add the corn starch/water mixture, and blend. On the stove top, cook gravy for a minute or 2
• Slice roast, cover slices with gravy and serve with the potatoes

Just a follow up Ivo - I made this on Sunday. It was truly delicious - and quite economical. We will get another meal of it tonight. Hubby loved it too. Thanks again for a great recipe.

That looks delicious! I love the smell of a pork roast as it is cooking. I usually cook a small pork tenderloin, perfect for one and I still get that roast aroma. I like to serve pork with applesauce.

I’ve been buying more pork lately due to the insane prices of beef (and chicken). Always looking for new simple and wholesome recipes. I think this will do very nicely and can’t wait to try it, and just as you say it seems to require very little effort. Perfect for those weeknights coming home from work and you simply don’t have all the time. P.S., I always try to buy the leanest cut. 😊

I agree that pork shoulder roasts are easy and super tasty. I also like to rub in cumin at the spicing stage--but I am not making an Italian recipe, just yummy roast.
