Are you ready for a delicious and easy to make recipe that is made from vegetables, and not tofu or seitan and yet, is just as delicious and just as nutritious? So follow me and I will show you how you can make this amazing burger using only a few ingredients and a lot of creativity!
INGREDIENTS:
4 cups of shredded cabbage
1 1/2 cups of frozen or canned corn
1 cup of water
Salt to taste
Black pepper to taste
1 teaspoon of chicken rub
1/2 teaspoon of garlic powder
1 teaspoon onion powder
1/3 cup cornstarch
1 teaspoon psyllium powder
1tablespoon of oil or vegan butter
1 cup of shredded unsweetened cornflakes
METHOD:
Add the corn and water to a blender and blend until smooth. Reserve
Add the olive oil or vegan butter to a skillet over medium heat, then add the shredded cabbage, salt, pepper, onion and garlic powder and chicken rub and sauté until lightly golden
Add the blended corn along with the cornstarch and stir for about 2 minutes.
Transfer the cooked corn and cabbage to a bowl, add more salt and pepper if you wish so and when it has cooled down completely, add the psyllium and mix very well.
Add the shredded cornflakes to a deep plate
Shape the burger patties, put them directly into the cornflakes, covering both sides of the Pattie and around it.
Put the patties in a plate, cover it with plastic film and put it in the freezer for about 20 minutes or in the fridge for about 40 minutes so they firm up before being cooked
Preheat your air fryer at 200C / 400F and bake it for about 15 minutes, flipping the pattie half way through the cooking time.
Remove from the air fried and serve it with your favorite burger ingredients and enjoy it!
