Thats the thing...bread baking is very forgiving. I never measure my ingredients. Intuition only. Its art really.

I made this today. Eating my first slice as I make this comment. I went with 1/2 hard white and 1/2 hard red. I also used lecithin. This bread is DELICIOUS! I am brand new at milling. This is my second time making bread with milled flour and I feel like a professional, thanks for all of your videos!!! ❤ (My first bread was a Becker recipe which was delicious too. But this one is better)

I’ve been a bread baker but I have never done it from the beginning with me grinding my own flour. So I am so glad that I have found you you’ve been a wealth of information thank you for doing these videos. I’m feeling more confident doing my own flour thank you. I did watch your pancake video and I think you and I may have the same oven. Mine is also propane has the griddle in the middle but mine is white or yours is black. And I love my old oven. 🥰

I’m so thankful and thrilled these videos have helped you 😄 If you ever have any questions don’t hesitate to ask! As far as my oven, it’s not “old” it’s just one that doesn’t need electricity at all. It’s battery powered for the pilot light. Quite handy when there is no power, but it is a very basic oven and doesn’t regulate temp as well.

Girrrrl!! you were my missing link! I'm just learning about all this. Came across Breadbeckers 4 weeks ago, started my Joseph's storage room. Got my wonder mill and Ank Assistant in the last 2 weeks and could not figure out WHY the bread wouldn't get higher then the pan!! Found you and been binge watching down to your fabulous bread video and tonight after work I could not wait no longer to try it out. It's in the oven as I type this, at 25 minutes...and I was amazed just putting it in the loaf pans....I am in awe watching it thru my oven window. You rock and I thank our Father in heaven above for leading me to you, and for your knowledge and for your serving, sharing heart. Your husband is one fortunate man!! Much love from Tn!

Oh my heavens! My Grandma used to tell me to ‘trust your gut’ (aka intuition). I have been failing at my bread with my freshly ground wheat. I kept thinking, it’s ready now, but punched that dough down and shaped my loaves. THANK YOU!! My bread is once again a success!

I have been grinding my wheat and making bread ever since I saw this video three months ago. My husband and sons go absolutely nuts over it. So do my friends.They get so disappointed when there is no bread on the counter. I have a kitchen aid grinder attachment and dough hook and its so far working very well for me. You are a life saver, can not say it enough but thank you, thank you….I purchased 50 lbs of hard red wheat and soft then I made my first loaf and OH MY GOODNESS, it was not at all the same as using all purpose flour, but your video helped me. Oh my Goodness! I have been trying to get my fresh milled bread to turn out better than a crumbly hockey puck for almost 2 years! This worked great! I don't have a mixer or an electric mill - I'm trying to perfect it without the use of electricity, since we either won't have any due to the solar flare or it'll be too costly to afford here soon. LOL I do have a hand mill, Wonder mill JR., and my own hands I used to knead. (I think that was the trick). It has taken a bit to get my hand mill stones ground down to where they grind the grain well. I used to have to send it through a couple times before it would be fine enough. This is strenuous work, but if you are aggravated at something or someone, it can be a great release of pinned up stress. So instead of getting angry at the situation, you can just say "I'm gonna go bake me some bread!". (And say it with conviction! LOL) Or just a good work out for upper body! LOL Thank you sooooo much! I'm so excited! I want to try it for pizza dough next!!

I started milling wheat 2 weeks ago and couldn’t get my bread to rise. Your tips for proofing the yeast and folding the dough made a huge difference. I baked an edible loaf of bread today!!! I still need more practice but I’m on the right track now. Thank you for the great video!

So, 15 months after I first watched this video, my comment is FINALLY, a helpful video for home milled whole wheat bread! Thank you for creating the video for hand kneading as it has worked well for our hard red/hard white/spelt sandwich bread and buns for over a year. We had the grains and Mockmill for some time but this video vastly helped the final result, especially the fold & roll before placing in a USA pan. We saw health benefits rather quickly and hubby purchased an Ankarsrum which arrived today. Hurray! Now we have a new learning curve. Blessings Felicia. 🙂

I just made it today. Thought I'd have all this time for the bread to rise while I ran an errand and sure enough it exploded by 30 minutes so my husband popped it into the oven. The bread is out of this world delicious. Commercial flour who?

This is such an awesome never fail recipe that I decided to try it using fresh ground Ezekiel flour. I made 4 1lb loaves like I do with the wheat. It did not rise as high but is still delicious! Moist nutty and a little honey sweet. Thank you so so much for this and all your recipes!

I have been enjoying this bread for several months now. It is the quickest and simplest recipe and so good! I saw that a lot of bread makers used oil instead of flour when shaping their lives. I tried this and it made this delicious bread even better! The texture is moister and softer. Best peanut butter sandwich ever! Also, I tried using molasses instead of honey and that was also very good. Ty for sharing this great recipe.

Yep! You can! And fun fact: bread flour from the store is made from hard red wheat. So "technically" I AM using bread flour. Just whole and intact :-)

I have attempted to to try making bread (fresh milled) in my new top of the line bread machine but just dozens of flops. Tried your recipie with a bread pan and it turned out great. My dough was sticky but I ran out of flour and didn't mill any more. I thought for sure I ruined it but i pressed on...still turned out great. Thank you for the recipe

Yay!! I’m so thrilled!!! You should be able to do this recipe in a bread machine. Just cut it by half so it’s only one loaf and add your liquids in first to your bread machine, then the rest 😄 That’s all I know about bread machines. I know each one differs. Glad this one worked out!

I had commented the other day that my loaves rose to much and what seemed to be to quickly. So I decided to try again because the bread really did turn out well it just was twice the size of my pans. Second time I cut recipe in half but still made 2 loaves and it turned out PERFECT! LOVE this recipe!

My loaves rose so much I was afraid they'd run over the sides. When I went to dump them out of the pans, which had been oiled, the first loaf split in half so I now have a top and a bottom. I went back to your recipe and checked and you really did say 2 1/2 tablespoons of yeast! That was a real surprise as it's usually 2 1/2 teaspoons. I understand how you get a big rise in just 20 minutes.

lol yes it does rise super fast! You can certainly back off on the yeast, it would just rise a bit slower. As far as it breaking, I have had that happen only when I didn't oil the pan enough.

Since I used a spray on oil, I've decided that next time I'll use butter so the dough won't cause it to spread thinner and cause sticking. Also, my kitchen was very warm.

@@quilterdunndunn8101 I always have success with liquid lecithin to oil the pan. It only takes a thin film. I didn't warm the pan first so today was a thick slather and it can taste it. But it's all good. The bread popped right out. I probably just need a new bottle of it, too.

Felicia! This morning, I milled fresh flour for the first time, followed this recipe, and have 2 gorgeous loaves to show for it! So satisfying and much credit to you 💜 Thanks for putting out this content with a Biblical perspective. Note: I made the recipe as published and as the dough was kneading in my Kitchenaid mixer, it kept wanting to creep over the dough hook collar. Do you think if I reduced the recipe by about 10%, that would solve that issue? (So I don't have to mix and prepare two loaves separately).

I know this video is older but I just successfully made two loaves using your recipe and after milling my first batch of grain….I took 1/4tsp of yeast away since we live at a higher altitude…and they turned out PERFECTLY! Thank you so much for the recipe and the great tutorial!

I can't thank you enough for this video. I've been making bread for years and its always hit or miss. You helped to answer a question of mine as to why my loaves sometimes fall flat, so I will definitely head your advice. I finally made your simple whole wheat bread recipe, I must say it was a great success. I’ve been milling for about 30 yrs & have always made a 50/50 bread. Well not anymore. I grew up in Florida & know how the humidity plays with your bread, I now live in Utah, 4600 ft above sea level & that s a different way of making bread. Whole wheat is the only way to go, thanks for your delicious recipe

I made this this afternoon with freshly milled Kamut. I am almost in tears! Lol This is literally the best bread I have ever had in my entire life! I was going to serve it to my grandkids with butter and honey, but we didn't need the honey at all. It was amazing. The kids scarfed it down! I did make one mistake that you mentioned and slightly undercooked it. The center was a little doughy. But that's ok... we'll get it just right next time.... and it was so yummy we ate the doughy part too!! Can't thank you enough. You've helped us take a huge step in our quest to get off store bought bread!

I'm glad I found your channel. Currently I make keto bread in a bread machine, but I want to also make regular bread from milled grain in the oven. I like the keto bread but it requires a lot of specialty ingredients that may get too expensive or hard to find and don't have much shelf life. My previous attempts using whole wheat flour yielded dense and barely risen loaves. I was sure using some milled at home would be even worse.

Absolutely agree perfect! Used 1/2 hard red and 1/2 hard white. Yummy..... only thing, sorry only waited 1/2 hour, you are right should have waited the full hour. That's ok it was worth it.

I am looking forward to trying your recipe. I don't have a grain mill yet but I use Bob's Red Mill organic whole wheat for now. I am trying to decide which grain mill will be best for me. When I want a slice of fresh baked bread right from the oven, I slice off a piece then turn the loaf on its cut end onto the countertop or a large plate so that it does not lose its moisture and heat out of the cut end. I have always had good luck doing it that way.

Try using your blender to mill wheat to flour. Try enough wheat for 1 loaf at a time. You'll taste the difference.

Finally!!! Just made this from hard red wheat. I use a Nutrimill Harvest. Anyway - bread rose ands is soft and perfect!! I have tried several recipes before - ended up with squished dense bread. Thank you!

I made this bread and your chocolate chip cookies. My family loved the bread and cookies! Quick question: I was about to buy wheat berries from Azure Standard, but it said to make sure to sort and "rinse" the wheat berries. Do you rinse your wheat berries before grinding them?

Oh my goodness, I can't wait to try your recipe! I have only been making bread for about 6-7 months and, while it has a nice crumb, it never gets sandwich bread size but my recipe only calls for 6-6.5 cups of flour and 1 tbsp of yeast! This might be a game changer! Thank you!

I made great bread today. Milled the grain. Milled it finer this time. Used the Kitchen Aide with bowl-lift to mix and knead. Had to stop and go mill another couple cups of wheat (in the basement). Divided the dough into three pans as mine are 8.5 x 4.5 x 2. Weighed out it was about 1 pounds 7 ounces each. It never did pull away from the sides, but I decided it was soft and elastic enough, just a little sticky. Just shaped with a bit more flour. Let it rise in the pans in the oven after warming the oven about 30 seconds on low. Placed a bowl of hot water on the lower rack, therefore no need to cover the bread. Rose beautifully and baked wonderfully and didn't fall. One of our grandsons is here today and he had a slice of not waiting to cool with butter. He liked it. I had butter and molasses. Too thick to toast. But I will be slicing thinner and toasting tomorrow. THANK YOU ❤

I made this loaf today, and just had my first slice off the end while it still had a bit warmth to it. This is good bread! And it's sturdy enough for a sandwich, which is what I wanted. I've mostly just made whole wheat challah in the past, and I always used diastatic malt (homemade), which made it rise beautifully. I actually cheated with your recipe and added a little to that too, but next time I'm gonna make it without it. I also halved the recipe and used my Zo bread machine for the dough, removing it before it went into a second rise. I think this might be my new best bread recipe. I'd like to make the full recipe and use my Bosch Compact to mix it, but I'm cooking for just myself and would have a hard time using all that bread before it stales. As it is, I don't know if I can even use up the one loaf in time, as I'm trying to cut back on bread due to digestion issues. Just thought I'd see how things go with this bread before I totally call it quits.

Thank you for sharing this simple recipe for freshly milled whole wheat berries!! I am new to milling grains and have been looking for a simple recipe for months. I made this today and it turned out wonderful on my first attempt. My husband loved it too! I do not have an electric mixer so I made this bread by hand, still checked my dough with the window pane test. I also used coconut oil.

Thanks Earl! I think I replied to one of your other comments, but you can definitely mix a hard wheat with rye. I would start with maybe 2 cups of rye flour and 7-8 cups of the hard flour in this recipe and go from there. Rye can be a bit dense.

I’ve been making homemade for 25+ yrs. I’ve never milled my own flour. There seems to be a few differences, tho not many. I’m super excited to try this. I have been. I just found you last week and then through you I found bread beckers.

Hi there ! I have the Bosch Compact which I love. My main goal is to make my bread by hand. I have purchased hard white berries and the Wonder Junior Deluxe grain mill, which I haven’t opened yet. My main reason for wanting to learn to grind my own wheat is in the case of a grid down situation, I will be able to do that. We never know when a crisis may be upon us and that’s very concerning to me. I’m all about having electric gadgets though. I have an Ankarsrum mixer, the small Bosch which I’ve made 3 loaves in, 2 different Bamix immersion blenders, etc. but with no electricity, I’d be out of luck. So I’m planning on diving into the manual bread making world. Great video and thank you for sharing your expertise !! I’ve subscribed to your channel and look forward to watching more of your videos. 😊
