Fresh pasta(specifically egg pasta) vs dried pasta? While fresh pasta is great and all, not all pasta sauces are compatible with fresh pasta. A great example of this is actually Carbonara: Since the dish is primarily made with eggs & pecorino cheese, using fresh egg pasta overwhelms the dish or what we locals say "too jelak" Basically, both fresh and dried pastas have their place. Assuming you get the bronze cut dried pastas of course and not the bottom of the barrel pastas
