Recipe Ingredients:
3 tablespoons chopped fresh oregano leaves (or 3 teaspoons dried)
6 tablespoons tomato paste
1 beef chuck roast (4 pounds), halved
1 medium yellow onion
3 garlic cloves
coarse salt and ground pepper
1 to 2 tablespoons red-wine vinegar
1 pound papparadelle pasta
Parmesan cheese, for serving

I stopped using chuck roast and found other cuts tend to be better. Hard to go wrong, however.

I believe pasta in Italy taste a lot better because of the kind of pasta they use.
