I'm making this now in my pressure cooker. I added 1 jalapeno sliced, some diced celery and a can of Rotel tomatoes. I did boil the dried beans and let them simmer for an hour first. My home smells amazing. Thank you for this video post.

Happy New Year Jackie. I'm making your recipe now. My top is rattling on high. The Beans and Hocks are boiling. Is that normal? I just took the top of to stir. So the top stopped rattling. I'm sure it's going to start again when it gets hot. Should I just leave it alone? It looks kinda watery. How much water should I have used for a half of 1lb. bag of peas and 1 small hock? I put 4 cups in.
In the video, I soaked them overnight but that’s not necessary unless you’re cooking with tomato products. The acid in tomatoes keeps dried beans from softening.
@Virginia Reid , I soak dried beans overnight in cold water (a big bowl with lots of water, more than just to cover) on the kitchen counter then drain and rinse. I never add salt to the beans when first cooking and I wait until the end. Now, dried black eyed peas I will soak for at least a few hours (again with a lot of water). Don't add salt to the cooking black eyed peas until the end, particularly if you're using a smoked ham hock which is salty enough as it is. Bay leaves are a must for almost any bean dish cooking.
@@missmaam792, yes, they do. As the weather cools here in Arkansas I miss the ladies at the high school cafeteria. They made the best pinto beans and fresh cornbread.

A big however . . . I would soak those pinto beans overnight in cold water. Edit: And add a dry bay leaf in the pot when cooking.
