Hey X the reason for the different color is the vacuum seal was lost on the one package which allowed oxygen back into the package and the color to return to the meat which you will notice the other two will return to after they have been open for a bit its called bloom, which happens to beef when the oxygen is removed from its atmosphere.. I hope this helps

I'm a bit confused about you answer . . . you are saying that the color 'returned' when Oxygen merged to the meat (in the one broken packing sealant) but there are obviously two packages which have a darker red color . . . or do you mean that the lighter rolor 'returns' ?

@@cashuma5010 the lighter color is the natural color of the meat when exposed to the air that we breath, the purpose of the vac pac packaging is to remove the oxygen to reduce the natural deterioration time. I hope this helps ...

Awesome video. I'm a huge beef rib guy. I own a BBQ place in Florida and my beef ribs are my number one seller. I use Angus ribs. I just got Wagyu ribs in and I was so excited until I seen this video. Now I feel like I have to come up with a new rub for them to spice things up!

Wagyu and grain fed may have hung for longer at the shop before they processed it. Most meat you get is already “aged” for a couple of weeks to let rigor mortis loosen up. Those may have just hung out for a little longer.

Always enjoy your video's. I like how you did a comparison of all 3 ribs.But i gotta say i'll take short ribs anyday over brisket.Lookin' forward to cookin' the first ribs of 2021. It's very chilly here in Ct. today, this March 19th, but the warmup is not far.Next week maybe 65 + tempts! Thats good enough for me. Thanks for doin' the videos.

Every time i did Black Angus, it was the best of anything... Ribs, Roastbeef, Steak, Brisket. you can't beat Black Angus.

By my own experience, you can still tender it more. Trust me, I always leave them completely melted, try raising up more the smoker temperature (around 250F for 3 1/2 hours)

I tend to trim the fat a lot more. There is enough inter muscular fat as it is. While I get great results, now I am wondering whether I should leave it on there.

You can't cook all three grades to the same final temp. Wagyu can be finished up to 20 degrees sooner than the others.

Agreed, Wagyu like this is too much for me, same as eating steaks of it. Need to have small portions the way the Japanese prepare it for it to really standout and not be overpowering.

Love your videos, and your passion, and learn lots, enjoy as a KamadoJoe owner, thank you! In USA, there is basically USDA Select USDA Choice, USDA Prime, and Wagyu. At Costco/Samsclub, I believe usually, we can find Choice there, and then I've been told that at grocery stores, they usually sell Choice or Select. In the video, you were comparing Wagyu to Angus (probably Choice...), and "grass fed". I'm curious where grass fed might fit in, with USDA...Do you believe it is Select? Or perhaps a grass fed USDA Choice option? Anyway, love the videos, and props to the excellent production quality as well! Very enjoyable, thank you!

Good Morning! Nice Video ! But I'm a bit confused about the dialog with Chris Smith . . . I could not see that any of the vacuum seals was broken, can you confirm, that the seal of the Angus packing was broken and if so, for how long ? Do you know for how long each of these ribs have been aging? Dry/ Wet? Were they frozen/ all of them? . . . there are so many parameters which can impact the raw materials and influence the Outcome . . .

Look at 1:03 there is obviously air in the package, the plastic is loose while to other 2 are still vacuum sealed with no loose plastic on either. Good catch Chris.

Een mooi vergelijk weer Roel :-) Weet jij toevallig van de hoeveelste ribrij deze afkomen ? Ben er ook wel eens bezig mee geweest maar die gingen de vuilnisbak in omdat het vlees niet te nassen was (super taai) ook was het vlees erop niet zo dik als die bij jou hier deze video. Ik denk dat die ribs die ik had meer van de achterste ribbenrij afkwamen... in ieder geval weer bedankt voor de video, thumbs up ! :-)

U can grill beef ribs by searing it .or cook it slow it oven. It will be more tender. U cant even hold it up cause itll melt through. I think smoke takes away from the great flavor that those big bones and fat have to offer. Smoking is just too powerful.
