Surprisingly, seeing that the skin of the tongue is actually peeled makes it mentally easier for me to eat it. The first time I tried it, I had it on a taco and I couldn’t get it out of my head that I was French kissing a cow that ate grass and regurgitate it and probably had mucus on top of it. Knowing that the top skin layer of the tongue is actually skinned tells me that I eating pure muscle and that makes it a nicer thought. Thank you!

What temp do you smoke beef tongue to ? You said 5 hours but Im that guy that relays on internal temp. My smoker doesn’t keep the temperature constant enough to rely on time. Otherwise, great videos, short but to the point and always humorous. 👍

God I cringe whenever I see someone RUBBING the rub on the meat. All you're doing is clumping it up with the binder and wasting rub by adding more to the spots you brushed it off of. Just dust in on thick and let it naturally bind to the meat.
I usually smoke it the same way as I did it in the video then toss it in a crockpot after til it shreds. You could probably wrap it in foil with beef broth and finish it that way too not sure how long it would take though. If I had to guess another 6-8hrs
Usually skin my tongues raw. I figured I would give this technique a try. Should have gone with my gut when I thought a 1hr boil was too long. Skin turned into shoe leather and the meat was basically cooked through. Skin wouldn't pull away so I lost a good bit of meat trimming. Put it in a brine anyway, still gonna smoke it tomorrow. Hopefully it isn't ruined. So what did I do wrong?

I’m sorry dude but half that tongue has the consistency of jerky after having already boiled it. People don’t smoke it whole - cut off the thinner part of the whole tongue and smoke it separate in parchment paper - let the fattier back part of the tongue cook longer using parchment paper as well. Tongue is extremely prone to drying out. Do not do this method. Unless of course you like tough overcooked meat.
