Smoked Chicken Tortilla Soup!!
Can also use a rotisserie chicken, baked chicken breast, or whatever you want for the meat really.
You'll need:
Taco Seasoning
Seasoning for the meat - I used Cattlemans Grill Mexicano (fav)
Chicken
Chicken Stock
1 can Rotel tomatoes
1 can Ranch Beans
1 can cream corn
1 can regular corn
1 large can crushed tomatoes
1 can black beans
Recipe differs based on how you do the chicken, but this is how I did mine:
Season chicken and smoke until 165
Pull the chicken
Simmer the bones in chicken stock for 30 ish minutes
Add canned ingredients and simmer for 10-15
Add chicken and simmer 5-10 minutes
Plate it up / add some cheese and enjoy
If you don't smoke the chicken, and just add all the ingredients without doing anything fancy this is super easy to make and still tastes great.
