Moved to NC, sold my pellet smoker as I didn't have room for it in the moving cubes.
Picked up a 22 inch Weber Kettle to get back to using charcoal and wood.
Also picked up a new camera and mic so wanted to test those out with a short vid.
Reverse Seared London Broil
I'd recommend marinating the meat - I typically do 24 or so hours.
You can do store bought or make up your own.
I make a simple marinade of oil, water, garlic and onion powder, kosher salt, pepper, mustard, soy sauce, and whatever other random seasonings in my spice cabinet I feel like throwing in.
Get your grill / pellet smoker / oven / etc setup for low temp or indirect cooking.
Cook indirect / low until the meat hits about 100 degrees, flipping around halfway to 100. I typically flip around 80 or so degrees.
Get your grill / pellet smoker / etc setup for direct heat. If you reverse sear using an oven you'd get a pan (cast iron ideally) nice and hot.
Sear meat until it hits your target temp. I typically go with around 120-130.
Pull the meat off the heat and let it rest, i let this rest for about 15 minutes and it came out perfect.
...and that's about it.
London Broil, done right, is a very good cut of meat offering a lot of value for the price.
