Hello T-Roy. I discovered chuck cooked on my smoker. I prep mine with a beef stock and butter I inject the roast. I put it on the smoker at 225F for about 4 hours. I then wrap at this time and pour some mor iniection over the roast and cook it until it is fork tender. I also pull my roast, saute some onions and mushrooms put the pulled roast and onions and mushrooms in a hogie roll and eat. I use some of the stock from the roast as a dipping sauce. With a cold beer, you can't beet it. YUM,YUM .

@TROYCOOKS 5 лет назад
You've got this Scott!! Only thing I'd change when doing brisket is to wrap the brisket in foil instead of putting it into a pan, but either way will work. Brisket tends to get fall apart tender in a pan and you won't be able to slice it unless you closely monitor the internal temps of the meat.

Hi there Mr. T-Roy. So i DID DID get my 57 cm Weber Smokey Mountain. You could NOT find it in South Africa so I squealed a bit here and there and soon I got a call saying we've got a few coming in. And just before Christmas it arrived. Have zero idea why South Africans have not cottoned on to this. So I gifted it to my son immediately and before the night was out he had found YOUR goodly vids and next day he knew far more than I did. We've had fantastic adventures. We had 2 humungous slabs of 7 rib each Beef shortribs. He had 2 different ways on each, set one each on the 2 grills. the one he covered up was IMHO better. It melted. We did a huge brisket (fantastic) and he and his dad did some pork spare ribs. I don't eat pork. Problem we have here is WOOD and suddenly I realised why South Africans don't do this. We just don't have the wood. We have imported chunks which are very difficult to come by. We bought some called hardwood (Sickel wood) and I do believe the taste can improve. Thank you so much for all your videos. Good cheer to you for 2019.

Finding decent cuts of meat at a discount is the way to go. In the DC area Giant Food, one of the first chain supermarkets in the area that is still here, has a small selection of Choice grade meats at a 50% discount. I picked up a 3.5 lb chuck roast for $12 back in December and it was delicious. This summer they had full packet briskets, Select grade, at $1.99 a pound. I bought 3 of them. It is worth the time to look for the specials and buy some extra and freeze the meat. I really enjoy your videos and the information you provide for the cook.

Leaving the door just slightly open, as opposed to wide open, means that the speed of the air flowing into the firebox increases, thus adding more oxygen per time to stoke the fire. You probably knew this already just by experience but it’s just a great example of basic fluid dynamics that I teach in my classes.

one thing with chucks is NOT just like a brisket. give it some smoke and color but it's got to be wrapped, preferably braised or will turn into shoe leather. I like to smoke mine in a cast iron with rub and worsesthire lid off, then about 3 hours will put stock in it and cover it for 3 hours or longer until I see it pulls. I found a big, deep cast iron at Academy sports for 20 bucks with lid. Much better then disposable pans and foil. Fits perfectly on my WSM. great for frying chicken on my stove also. I shread the chuck, never slice and use claws. if it doesn't easily shread its undercooked.

Great cook Troy! Chuck roast is underrated by many, but this video proves how good it can be when done right 👍 I can’t tell you how many times I’ve forgot to turn my camera on. LOL! You always deliver quality in your videos! Cheers my friend 😎

Like 968. For those folks at a local market, they a have bell to ring. A butcher comes out and can or cannot take your request - then. Love me some chuck roast.

Thanks T-Roy! Great video. You, Baby Back Maniac, Harry Soo, What's New BBQ, How to BBQ Right, All Things BBQ, and all the other RU-vid BBQ greats have really helped me up my BBQ game and I'm very grateful! Do you think you could do some videos on managing multiple cuts of meat on the smoker? Also I'm sure folks would appreciate insight into how you manage fire throughout your cooks in these videos. Thanks for being you, brother!

Awesome turn out. I find that Chuck always needs about 210 internal to be like what you had there.. Lots of videos out don't take it that far and you watch them struggle to shred it. Bark ended up lookin amazing!

Yep, I cook by the feel of the tenderness, not by temp. And yes, I'm a bark guy, so I like a good bark. That Moe Cason rub is some good stuff!!! Thanks for watching Joshua!!! Cheers brother!!!
