Smoked Korean Pulled Pork Sandwiches With Kimchi Coleslaw

I love Korean food, and in this video I use Korean inspired flavors to smoke a Pork Butt on the Weber Kettle using the Slow n Sear. To compliment the delicious and tender meat I also make a sweet and spicy Korean BBQ Sauce and some Kimchi Coleslaw. The resulting sandwich, built on a toasted ciabatta bun, is just fantastic.
Korean Pork Butt Marinade Ingredients
3 TBSP Soy Sauce
1 TBSP Sesame Oil
1 TBSP Minced Ginger
1 tsp Minced Garlic
1 TBSP Orange Zest
1/4 cup Fresh Orange Juice
1 small Red Pear Grated With Juice
1 tsp Ground Black Pepper
2 tsp K POP Sauce
1 tsp Red Pepper Flakes
2 TBSP Brown Sugar
Korean BBQ Sauce Ingredients
1 1/2 cup Neutral Flavored BBQ Sauce
3 TBSP Soy Sauce
15 oz can Sliced Pears With Juice
3 TBSP Brown Sugar
1 tsp Ground Black Pepper
1 tsp Granulated Garlic
1/2 tsp Red Pepper Flakes
3 tsp K POP Sauce
Kimchi Coleslaw Ingredients
16 oz Coleslaw Mix
1/2 cup Chopped Kimchi
1/4 cup Scallions
2 TBSP K POP Kimchi Mayo
1 tsp Kimchi Juice
2 TBSP Apple Cider Vinegar
1 TBSP Agave Syrup or Honey
1 tsp K POP Sauce
1 tsp Dijon Mustard
1/4 tsp Salt
1/2 tsp Ground Black Pepper
1/2 tsp Sesame Seeds

Mouths watering Ry! Amazing video! And that sandwich looks delicious. I was half expecting a Banh Mi style sandwich with a french baguette, not disappointed with what you used though! Incredible cooking.

Ry, i have to say, after watching more barbecue videos on RU-vid than is healthy after buying myself a Weber performer deluxe last year, Your channel is the best and most well presented. Professional, informative, never gimmicky and cheesy. I congratulate you, Only improvement for me is there could be a bit more info on the meat cuts for us brits, as they’re always called something different in our butchers. Thanks and i hope you’re keeping safe during these bad times the world is going through.

Thanks so much! Yeah, I've tried matching those cuts to other names sometimes, but it really isn't easy. Some are actually regional, so in one part of the country it's called A and in another part people call it B :)

Bro that turned out really good. That is a great twist to typical pulled pork and slaw. Believe it or not I cooked a small pork butt a few months ago in an air fryer and I was shocked at how good it was. I used Firebuds Pow Pow sauce and it has that Asian flavor.

Dang that looks like one awesomely tasty sandwich. Love the kimchi coleslaw on top idea too. I buy kimchi by the gallon, it's completely addicting with it's spicy salty, garlicky shrimp taste that goes great with an ice cold beer. I learned to eat it in Korea. It goes great with beef, pork, chicken and shrimp. I'll be making this Recipe for sure. Thanks for the idea.

I'm Korean and I've never heard of K-Pop sauce. LOL.. Regardless, your recipes look good. Good enough that I'll be giving it a try! Since I've never heard of K-Pop sauce, I'll substitute something else. I'm guessing it probably tastes a bit like Chojang, which can easily made at home.

With a Weber Kettle to start I would get the briquette baskets from Weber. You can always get more accessories later but those are a great value :)

Idk if I've ever had a pork butt cook in less than 10 hours. One of the best smells in the backyard for sure! I usually cook at 250 on my Weber with SNS.

At 275-300 I usually see closer to 7, especially if it races up to 300 on occasion. But 10 is not unheard of at all :)

I mostly do that with beef cuts, but even then only rarely. Part of it is logistics with filming time/schedule, and partly because in the many cooks I've done I've honestly never noticed any difference in results one way or the other :)

It actually got pretty deep, and I was confident of that after a few hours when the temp moved slow, meaning I likely hit that cold deep pocket. But, as you said, the later position was most critical as a guide :)

Great stuff. Just wondering why the video quality is so poor when you’re talking to the camera indoors? Surely you’re using a webcam or something, I cant imagine the lighting is the reason for this?

One more question, I always have the issue that I want to smoke pork shoulders, briskets, whatever, but it makes WAY more than I need. Do you store your extras? If so, how? We use freezer ziplocks but we lose a decent amount (freezer burn, etc) and would love to upgrade to a vacuum seal system - worth it? Also seems less "iffy" if you wanted to share with friends - handing them a vacuum sealed bag vs. a rolled up ziplock :)

We just put leftovers in Ziploc bags and label them. But we never, EVER forget any of those and find them six months later ;)

You want to know my method? It's called forgetting and leaving a grate out in the rain and finding it rusted so you have to run to Home Depot to pick up a new one right before filming :) I do usually buy a new grate every 2-3 months, though, since I'm cooking on them 3-4 times a week for videos and testing.

Great recipe Ry! Unfortunately K Pop isn't available in Australia ( can you believe that? ). I guess the guys went for what they saw as their biggest market first. I shall have to get inventive..... No I won't!, there's plenty of recipes out there. By the way, I take it the gloves are for hygiene? You sucked on a finger : naughty Ry!

The gloves are actually just to allow me to quickly make camera and lighting adjustments without having to wash and dry hands. I can just snap off a pair of cheap nitrile gloves and snap a fresh one on :)

You spoiled my joke with a plausible explanation : ) With K Pop still being relatively new to the market, there are no copy-cat recipes out yet, so I'll settle for chogochujang, which I believe forms the base for K Pop. I think just using Gochujang would be better actually, you would use it for Kimchi too anyway.

Sorry RY I realized that the first part of the cook was not that important so when you put the probe in after wrapping you definitely got it deeper so ignore my dumd observation

@@CookingWithRy I've been trying to find a recipe actually for a Korean coleslaw. I am considering just using shredded napa cabbage and maybe some grated carrot or korea radish (the football sized one). Now I have a starting point for the dressing.
