Looks good enough to eat. We make a version of this but we put a few chunks of pecan or apple wood to smoke it slightly not too much mind you. Never thought of using the pineapple skin like that. Thanks Fab

I'm going to make this! Its beautiful and so thoroughly explained. Culinary Twist Baja sauce (or Maya Bay or Bora Bora) will go perfectly on the side! Can't wait!

I'm making this today with Colby jack and mozzarella (I hate brie) and pepperidge farm stuffing. I also bought a can of pineapple and will purée and use it for a brine.

So my Bradley smoker maxes out at about 275 degrees... would it be reasonable to smoke for an hour and finish in the oven?

ok I know I'll probably be scorned for not having a komado style grill, but I'm gonna bet this will taste just as good done on my offset! I have pecan wood to cook it with :). Definitely appreciate the step by step! it looks incredible, definitely going to be one of my next cooks! definitely got a thumbs up!

I will, thanks! I'd 'gone through' a couple of those little bullet smokers through the years. Always wanted an offset and finally managed to get one. It's a bit big when cooking for just the wife and I, so a medium/small kamado might be in the works for a may birthday or Fathers Day..... :) will definitely do pics and maybe a short vid on the loin when I do it. One of the cooking groups I'm in, they get all tore up if there's no pics, HA

Charles S Understandable! got to document the tastiness! A kamado would be an excellent next grill for the collection, so efficient on charcoal and keeps temps cruising for hours!

I have a question for you. We are a totally non alcoholic family, suggestions for something other than brandy to sautee the pineapple with?

Ok I did this today, it turned out good on the offset smoker, but 1/2 cup of sage was a bit much for my tastes, next time I'll cut back a bit on it, but it turned out very well!

A friend of mine made this recipe but he found that the 'stuffing' fell out and that it had a bitter taste almost like fondue. Any suggestions?

+Revojato Should the rind have been removed from the brie?

+Revojato Yes, I would say remove the rind. Did he tie the loin well? It should hold in fine, some might fall out the ends, but if you tie it tight it will be fine.

I made this, but to be honest, I was not impressed. The brie ended up soaking in to the pork - giving it a weird texture and an off flavor. Brie Ive found always gives that gamey taste and smell, and while the smell was not that bad - the taste was off. I think I would try this with a different cheese

The brie was way overpowering. Learned that my family really dislikes brie.

Sorry about that, I really like how brie works with a little sweet contrast like the pineapple. I am sure it would be good without cheese at all too, the good thing about stuffed pork is that you can wing it with your favorite flavors!
