We served turkey legs at a Renaissance fair a few years ago. We had a customer lose his turkey leg to an eagle during a birds of prey demonstration.

Love your style, & your channel! My daughter found you when we were planning our first sausage making attempt. We used your basic recipe & we were both big fans of how it turned out! Bye! i am writing to you from Italy. Thanks to your videos I discovered my new passion which I hope will soon become my new job .. One of the biggest difficulties I find in trying to "copy" your recipes is the search for some raw materials that very often, unfortunately, are not easy to find on the Italian market. Amazon helps but there is not always everything and having it sent to you from America is really too expensive. I need your help with two ingredients that are hard to find: 1) "pink salt" was just "pink himalayan salt" which I understood to be quite another thing. Is there a "chemical" name for this substance? 2) the mix of 16 black peppers how can I get it? in Italy it cannot be found with this name. A thousand thanks!! You are number 1

Been a while but I might be able to help. "pink salt" is also know as "Prague powder #1" and is a mix of 6.25% sodium nitrite and 93.75% salt, also known as curing salt. For the pepper you heard him wrong, he calls for "16 mesh black pepper", "16 mesh" is the grain size the pepper is ground down to. "16 mesh" is the same as a 1.40 mm opening sieve, basically, you can use any coarse ground standard black pepper.

Is 4 TBS of pink salt safe, or do I not know what pink salt is? I thought it was like prague powder and you're supposed to use it really sparingly?

Will certainly do this recipe! One concern....Pink salt...(I would imagine Instacure #1)...did you go a bit heavy? I'm thinking 1 tsp. would suffice...?

@@christopherdirienzo3578 My rule of thumb when making sausage (yes, I realize it's different) is 'one teaspoonful per 5lbs of mince)...4 tablespoons seems odd...maybe has something to do with penetration into the legs...Your experience with the legs looking like 'flamingo legs' sort of tells the story...thanks for the response...

@@charlesa3374 Man they came out way too pink , I asked people from bbq fan page I'm on and they said to not bother eating them unless you want to get sick...I already tossed them out , its 15$ of Ingredients down the tubes but I'm not taking the risk ... Bradley and chuds bbq is the best , I'll never doubt that but I didnt do my research and followed the description to this video here and they were way too pink and probably poisonous , 4 tablespoons is outrageous..

@@christopherdirienzo3578 There's nothing worse than tossing a 'project' after investing so much time, effort and money...but you did the right thing...better to have tossed the legs than taken a chance on eating them...truly not worth it! If you're looking for a poultry project, I recently saw Bradley's video on Buffalo Chicken Sausage (I believe that's the name)...basically just chicken breasts, seasonings and bleu cheese...let me know what you think!

Hey, I wanted to ask you if you have ever smoked a “eye of round roast” I just bought one and to be honest I don’t think I’ve ever seen this cut. since there isn’t any connective tissue or much fat, should I use a meat tenderizer on it? Pink salt, Prague powder, curing salt... all the same thing, different names for sodium nitrate, which is positively linked to colon cancer, among others. Himalayan pink salt is a different thing, NOT a nitrate, and NOT what is used here to achieve that pink, juicy meat. Da*n, I do miss nitrates, and this juicy dripping pinkness is exactly why.

He’s from New Hampshire which has basically no gun laws at all. Also the east coast is arguably the most red part of the country. He also has many hunting videos on his channel which obviously doesn’t mean he’s fully pro 2A but I doubt he’s anti gun. Either way if he makes good videos and good food why does it matter who he voted for?

The use of Sodium Nitrate(Pink Salt) is completely unnecessary and ridiculous. There is never a need to add synthetically produced chemicals to food. Try Celery powder which is naturally occurring.

I don't use it either, I prefer to avoid the serious health risks. But I'm honest about the advantages and what I give up. Brining without it lacks a certain pink juiciness and "pop" . Agreed on the celery powder - yummy!
