Smoked Beef Ribs Recipe.
We had some awesome weather this weekend and I decided to smoke Beef Ribs that I bought from Crowd Cow. These are Wagyu Beef Chuck Short Ribs and they had a ton of intramuscular fat in them which helps to baste the smoked beef ribs from the inside out. This makes them extra tender and they also tend to cook faster in the smoker.
We used the Pit Boss Vertical pellet smoker but any kind of smoker will do. You just want to make sure you are using indirect heat and have the smoker set to 225 degrees Fahrenheit. I used a simple salt, pepper and garlic seasoning for the rub and used some Worcestershire sauce as a binder.
The smoked Beef Ribs cooked for a total of 5 hours. 3 hours in the smoke, 2 hours in the foil. I came out and spritzed them with water at the 1.5 hour mark and then again at the 2.5 hour mark.

Geez that slice you tried really did look perfect! What do you look for when deciding to wrap or not? You posted this just on time for a nice lesson we picked up beef ribs this morning and I’ve only done them twice but thinking of heavy basting and not wrapping.

Thanks, Frank. There are multiple reasons to wrap or not wrap but I usually wrap so they don’t get too smoky (my girlfriend doesn’t care for the strong smoke flavor). I might also decided to wrap if I want to capture the juices for a gravy or dipping sauce, and also to speed up the cooking time a little bit. If I decide not to wrap it’s because I’m not happy with the color and bark... in that case I would just continue to spritz them every 30 minutes and let just let them finish in the smoke.

Hey, that was awesome. Only issue with pellet grill i have is that the smokey flavour isnot intense enough like stick burners. I have used GMG pellets, not happy with these. Could you taste the smoke. Or it's just me.

Thank you! I have multiple types of smokers an I agree that the pellet smokers do not put out as deep of a smoke flavor. They just can’t infuse the same smoke as a split of wood. With that said, people who haven’t cooked on a stick burner or charcoal smoker have no complaints... it’s one of those objective taste things.
