Tessie: if I make a large pot of soup I quite often make a casserole from the leftovers. I strain out the meat and vegetables to get about 2 cups broth which I thicken with flour and butter, add a cup of any cooked pasta, some of the veggies and meat, and cheese and place in a casserole and heat in the oven for about 1/2 hour. Another meal from the same meal but done in a different way. Waste not, want not. If I make a casserole of some kind and there are leftovers from that I add broth of some kind and make soup. Or I throw any leftovers in the freezer and either make soup or a casserole some time later and it seems (but isn't) like a whole new meal.

In the Fall my family does a Ladle and Loaf Sunday get together and everyone brings a homemade soup and loaf of bread. Definitely going to bring these two with me!

I grew up with hamburger soup. My youngest daughter is 20 now and still asks me to make it because it is her favorite. Hamburger soup was the cheap meal because my mom used to save the leftovers of the vegetables she had cooked in a butter tub in the freezer and when it was about full she would make a big pot of soup that we would eat on for a few day. It always filled you up

I can only imagine how great the homestead smelled -- between the baking bread and the simmering veggie beef soup, Tessie! And you and Chevy Man will have leftovers galore! (Has anyone ever succeeded in making a small batch of homemade soup? I haven't.) Isn't this a fantastic time of the year for cooking from scratch? Your own tomatoes, zucchini, and other veggies from the garden have to be fresher by far than anything you could buy at the store. Easy on the budget and great for your health at the same time. Thanks so much for your faithful commitment to giving us creative ideas for frugal but delicious meals. We need that more than ever right now!

I had a poor man's vegetables soup I used 6 pounds of roast and a half pound of vegetables . A can of Lipton onion soup. I ate it with rice. I got the meat out of the dumpster.

I’ve made hamburger soup often when my kids were little because I could feed a whole bunch hungry kids for little effort or money, lol. Once in a while one of the kids, all grown and parents themselves, will still stop by for a bowl of soup and a chunk of warm bread.

Hi Tessi ! I just wanted to say that in my hispanic world the name of that soup is PICADILLO . The taco seasoning is for that cummin , coriander , onion and garlic flavor . In my world we grind our spices in a mortar made of lava rock ! I can almost smell your food lol it looks delicious!

My exhusbands aunt gave me a vegetable soup recipe when we got married, it called for 1 packet of taco mix to 1 pound of hamburger. It was wonderful! I wouldn't hesitate putting it in my soup at all

That looks delicious! I wrote out the recipe to try later this week. I only have a balcony but I have been harvesting green beans and cherry tomatoes and herbs from it. Every little bit helps and I enjoy seeing things grow. My neighbors have all commented on my balcony garden - I hope to inspire them to plant things too.

I love your videos where you make such a cozy meal from what you have at hand. Since covid I have learned to appreciate the simpler things rather than constantly going to the supermarket to fill a recipe list. Also , I don't care how people are cutting carbs/ making all kinds of faux breads...I will always eat good hearty home made breads! Everything in moderation is my motto. Thank you dear heart

My mom used to make a soup similar to this. She called it Hamburger Soup. No taco season, and she added the corn at the last five min. mark. It was very good and we always had it Halloween night because it was warm and could sit on the stove until we all came home from trick or treating. My family of picky eaters wont eat it so I always can a few jars just for me. It cans up very well. I leave the corn out and add it once it is all heated up. It makes a great and quick lunch.

That looks like a healthy and hearty meal, Tessie! Thanks to your inspiration we bought a bread maker at the thrift store for about $8. Then I ordered the Essential Bread book from Amazon (used). Boy! That was a GOOD investment. Our bread maker works like a charm and I love the recipes in that book. As always Tessie you keep me learning and growing here on my tiny homestead.

Soup is one of the easiest and most versatile foods that anyone can make! It's a great way to use up leftovers, use whatever you have on hand and you can make as much as you want. Most types freeze well too! (Any beef soup I throw in a couple bay leaves for extra good flavour!)

For anyone struggling to get through the loaf of homemade bread before it goes really stale, there is a method called tangzhong. Basically, you take a portion of the flour and water for the bread and heat it in a saucepan to make a thick paste. Some call it a water roux. Chill it, then add it into the bread and make it as usual. I use a bread machine and I just plop it in before I put the flour in. Wow it makes a difference! The bread stays soft so much longer! I’ve been able to have untoasted bread on day 3. That was impossible before this method. It’s no extra ingredients. Just an extra step and a little planning ahead. There are videos on RU-vid about it, but I got my amounts from a blog post I found. Definitely worth trying if you’re tired of crunchy bread.

I don't always follow recipes and I won't buy something just for a recipe, I make substitutions just like you Tessie I think that's the best way to cook so you use up what you have and less wasteful. One of my favorite soups is Chicken or Turkey diced corn black or red beans tomatoes and chili’s if you have them and broth plus a packet of taco seasoning. I love it with a spritz of lime when serving or a spoon of sour cream. So good. I can it!

Cooking from scratch is always the best. Back in the day saturday was a 'soupday' at my parents home, but when I was 15 or so it became 'soupday' for a lot of my friends :) My mom (still) believes that you have to made in a large pan otherwise you're missing something. But when I was 15 there was a simple solution instead of 2 kids there were 10 to make sure that the pan got empty :) Another funny anekdote is that the mother of a friend called my mother for a recipe, because her son didn't like the soup that she cooked :) Nowadays I'm the one that make the soups and stews for a lot more people than just myself :)

I love V-8 Juice as base to make It juicier, thicken with cornstarch. Mom added a splash of vinegar with the spoon of sugar, for a long, very low simmer. I cook an onion with the meat, but also add another Onion chopped in different sizes for texture. Tomatoes & frozen veg are great. If too juicy Add a tiny bit of barley. And a can ofyellow cream corn makes the broth richer. I enjoy your recipes & advice. Thank you for your Inspiration. ◇♡♡◇

So nice to see the honeybees on the sunflowers. My parents and I make a huge batch of vegetable soup every fall with goodies we have saved over the summer from the garden, so good. I always like to add some alphabet pasta to make it more filling. Have a blessed week.

Have never seen our non meat soups as poor peoples food, but simply healthy and nutritious. It was an LDS/Mormon friend who reminded me to use my Bob's Red Mill TVP (textured vegetable protein) as a meat substituted when making peasant soups. Also like using diced mushrooms as a meat substitute as well. We love big grilled portabella mushroom's for burgers. I'm using my InstantPot a lot this summer to make different peasant soups. I know you make money from views of your videos, does watching the ads also help???

Tessie I’ve made a hamburger soup for decades mine takes a packet of Lipton onion soup, and a package of frozen mixed vegetables and a can of diced tomatoes and yes it takes the sugar too! It’s very good and an inexpensive meal for a family!

😁👍 Looks good. I will try the soup this way...I make my Hamburger soup with the Hamburger meat, onion, carrots, tomatoes and cabbage...I like to use Stewed tomatoes and then I add worsheire sauce with salt ' n pepper. My grandmother taught me that way....❤🙏

I think the sugar is in there to cut down on the acid in the tomato's. That is what my mom told me when she used to make spaghett sauce.

My most favorite soup is "stone soup" based off of the story by the same name. A little bit of this, a little bit of that. Before you know it, you have a delicious soup in the pot. This recipe reminded me of that. Thanks for sharing....
