Makes 10 puris
1 cup plain flour
1 tablespoon Samolina
2 tablespoons oil
3/4 teaspoon salt
1/2 teaspoon cumin powder
1/8 teaspoon turmeric powder
Green chili paste to taste
1 teaspoon garlic paste
1/4 cup finely chopped fenugreek leaves
Approximately 1/4 cup warm water
Mix the above ingredients to bind a medium hard dough.
Allow the dough to rest for 5 to 10 minutes covered.
divide into 10 equal pieces.
Roll circles 11cm in diameter or 2mm thick.
Deep fry on a medium high heat.
Pour oil using a spoon over the puri to help them puff up.
Fry both sides until lightly golden.
Drain well.
Drain further or kitchen paper in a colander.
Enjoy.
