This animation shows the air flow within a solenoid valve (Max-Air Technology SV63) during manual override.
The path of the internal air is shown in blue, the path of the air from the supply to the actuator is shown in green, and the path of the air exhausted from the actuator is shown in yellow.
When air is supplied to the middle bottom port, air flows into the left port of the pneumatic actuator, which normally closes it. The air supplied to the endcap on the right normally holds the spool to the left (this force is represented by the smaller arrow on the right). However, when the coil is energized or the blue button is pressed, air is allowed to flow into the chamber on the left, which has more area so that the same pressure applies more force on the left side of the spool (represented by the bigger arrow) which pushes the spool to the right. This change of position allows air to flow into the right port of the actuator, which normally opens it.

What type of solenoid valve should we use for our Arduino-based system, considering it's connected to a container with no direct water source or pressure?

I don't know; I mostly have experience with NAMUR mount solenoid values for pneumatic actuators.

So fully tightening or loosening this screw changes the start position? I don’t understand, can someone explain?

Pushing the blue button on top does the same thing as powering the solenoid, which pulls the plunger to the left and allows pressurized air to enter the middle chamber. When the chamber is pressurized, the air pushes the spool to the right, changing the airflow path. Of the three ports on the bottom, the middle port is pressurized. The way this valve is assembled, since the view is from the actuator side, when unenergized the pressurized air goes into the left actuator port (green arrow) and the right port can vent (yellow arrow). Then when the solenoid coil is energized, the left port vents (yellow arrow after 0:11) and the pressurized air goes to the right port (green arrow after 0:11). I don't think there's a screw. But if you're wanting to change the start position, you may be able to disassemble it and reassemble it in a mirror image configuration. Just check with the manufacturer or vendor to make sure you don't void your warrantee!
